    if you buy a bottle of kombucha from the store you can just pour a quarter of the bottle in to your cooled sweet tea and after a week or so a scoby will develop and you will have kombucha.

    when adding a scoby to a new batch of brewed tea you must add a portion of starter liquid (already brewed kombucha) in with the scoby so that it ups the acidity levels which helps fight off unwanted bacteria. Always make sure your utensils and hands are sterilized when reaching into your brew. Bacteria on your hands can seriously mess things up which is why I recommend trying not to handle the scoby too much. Scoby's like to be undisturbed, and in a dark, warm place. If you live in colder climates you will have to use some sort of heater or nothing will happen as the scoby will go dormant.

      It does help with the acidity but the reason you add it is actually because it contains the actual SCOBY. The mushroom looking thing doesnt have enough of the live probiotics.

    Instead of just putting the scoby in your room temperature sweet tea, add also a cup of the kombucha from the previous batch. It'll kick start the fermentation and keep the scoby strong and healthy.

      +xTheOxx There isn't really much of a reason to transfer the pellicle anyway, the microbes carrying out the fermentation are active in the bulk liquid and not in the pellicle.

    Recently i started making tepache, a Mexican drink made with fermenting pineapple skins, sugar and spices. I find it easier to make and the taste and carbonation are great too. And no need to find a scoby dealer

    I know this video is old BUT, there a few things in here that are miss leading.
    You can use green tea for kombucha, or a blend of green and black. But don’t use flavored or altered teas. And you MUST add already brewed kombucha (starter) to your tea. The “SCOBY” she is referring to is more of a bi product of the actually SCOBY and most of the bacteria and yeast are in the liquid not the SCOBY mat that is produced. You can technically brew with just starter and sweet tea, no SCOBY mat since the life force is in the liquid.

      That is exactly what I needed to hear. Tried to make a scoby around 3 weeks ago but the tea has only gone cloudy with a small amount of scoby forming in the bottom of the jar hopefully this will do for my next batch 😊

      @@LishaGirli It definitely can, takes a bit of practice to get your process down and experiment with flavors. Store bought stuff at least in the US has undergo a process to reduce the natural alcohol(not high enough to get tipsy but still too high for sale) which can remove some of the health benefits as well.

    My school has a class called Smart textiles and in the class we learn how to take scoby and turn it into plant leather and can use it for weaving, knitting, sewing, dyeing etc.

      It usually looks nicer than that. Hers looks really like gunk. The one I make at home is a nice piece that looks like a silicon sheet.
      I usually continue to brew the next batch in the current bottle so I don’t move the scoby with bare hands. I think they move it around too much and introduce lots of bacteria from the hand. Also it’s best to throw away scoby after 4 fermentation. Hers look really like snot.

    My first batch made me feel so accomplished. 🎉 When I make mine now, I sweeten it after I drain the leaves. I then add flavor after the desired fermentation.

    After a week of fermenting, I personally use 1lt glass bottles. I pour in 800ml of the Kombucha along with 200ml of Apple/Blackcurrent juice (with no preservatives) to give it more flavour. I leave those bottles in a dark, warm place for another week before storing them in the fridge.
    So I recommend adding juice to your own Kombucha. If you do, it was to contain no preservatives or anything artificial.

    My mom would make this all the time when i was 3 or so. She was amazing at it! It tasted delicious but because of moving she ended up stopping a few years later. Still addicted to kombucha to this day

    You can make your own SCOBY by dumping a plain bottle of Kombucha in your pre-made cooled vat of sweetened tea. You will have baby scobies in a couple of weeks.

      Plenty of other videos on youtube that do this. This one was a way oversimplified version and missed a few key elements of brewing Kombucha.
      I have been researching the topic like crazy so that I can brew my own once the scoby I ordered arrives.

    Thank you for this information. I just had knee replacement surgery and took 5 days of antibiotics afterward. Everything is going great, but I know I need fermented foods to get my microbiome back in balance. I'm going to make cambucha today. I've already made simple sourkrout. I'm amazed at how perfect nature is and I'm grateful for the wealth of info to be found here on the internet.

      +Chase Brown I'm not sure if you saw some of the other comments but another way to acquire a scoby is to do the sweetened tea and add a bottle of kombucha that you bought somewhere. Or if you have enough patience you can simply ferment the sweetened tea and it will eventually start growing a scoby, as long as you're careful with it.

      Go to a health store and buy a bottle of unflavored kombucha look for one with weird bits on the bottom or even a thin layer on the top. Add that to sweet tea (black and never use earl grey) wait a week to a month (depending on how warm it is) you'll either have a scoby or mold

    Interesting. I start out the same, measuring out 4 cups of water, bringing it to a boil, adding and dissolving the 1 cup sugar, steeping 8 bags of tea. Then - we differ. I pour my strained tea into a 1 gallon glass jar, add cold, filtered water to about 3/4 full, then I plop in the baby scoby that grew on top of the mother scoby, add in 1 cup of plain, fermented tea from either my Scoby Hotel, or from the batch I previously brewed. Cover and let ferment for about 12 to 15 days. Then I bottle it with 2 Tbsp Mango Juice (I like the Naked brand here in the U.S.). And it ferments on a heating mat for about 8 more days before going into the fridge. Delicious! Have not had a cold since I started drinking it.

      This was helpful. When you say 2 tablespoon Mango Juice, do you mean concentrate? Or do you mean ready to drink mango juice that's already had water added to it? Because two tablespoons doesn't seem like nearly enough.

    you can grow your own scoby, make sweet tea and add store bought kombucha, leave it for a few weeks.
    you also don't need black tea, you can use green tea as wel, or smtn else

    Not sure why stirring your fresh brewed loose leaf tea before you pour it into the gallon jug is never mentioned but I highly recommend it! Of course filter it before pouring into your brew vessel. Stirring before it's poured especially right after it's done brewing gives you a much stronger and rich tea!

    Dear bizarre comment section: I find it hard to believe that anyone saying to throw the pellicle away has ever brewed kombucha. It's true that the SCOBY pellicle isn't "necessary" but kombucha brewed with only starter tea will ABSOLUTELY TAKE MUCH LONGER TO BREW. This isn't rocket science, you can try it for yourself- brew one batch with the pellicle and starter tea and one batch with just starter tea. The one with the pellicle will brew way faster. Also, the SCOBY is not that delicate. I touch it with my hands, use brewing jars for tons of cycles without washing them, and never worry about PH or having super filtered water. This stuff is pretty resilient and getting good kombucha is more about learning when to move to 2nd fermentation then refrigeration based off taste, rather than following a recipe.

    How to make 1 gallon of Tea Wine (Kombucha)
    Sterilize everything (pots pans tools Container ect) you can do this with boiling water or disinfectants.
    In large pot, boil 1 gallon of water.
    When water is boiling, add 18 teabags of your choosing. (I used black tea.) Add 1.5 cups of plain sugar. Brew for 15 minutes. Keep pot covered.
    After 15 minutes, turn off heat and wait for it to cool to room temperature. This is extremely important. Remove tea bags.
    Once the tea is at room temperature, add it to 1 gallon container.
    Get yeast, and put it into the container. (any type of yeast will work, including bread yeast. I recommend using yeast specifically used in wine making. Anything from the Red Star brand is good.)
    Put ballon or airlock over container. (This is because yeast eats sugar and produces alcohol and c02 gas. )
    Put container in a dark, warmish place. (Yeast doesn't like light.)
    Wait for when fermentation stops. This should be in around 1-2 months. You can halt fermentation prematurely by putting it in the refrigerator for a few days and removing the scum (yeast) that forms on the bottom.

    My kombucha is transluscent. To help clear the mushroom, one can put a table spoon of grain alcool in tea before puting the scooby in, to jumpstart it.

      +Greg Wells Its just a bunch of bacteria and yeast. If you make the same tea and put some ready made kombucha in it it will start to grow on its own as the fermentation process is active. So its basically a bunch of bacteria that you can grow with a little piece you got from somewhere.

    Hello. We're doing with green tea with less quantity. We used 800ml water, 80gm sugar and 8gm green tea. We used the GTS Kombucha drink (green tea flavoured), to make. We used 50ml of Kombucha drink. So how many days we should keep it outside? And how many do you think it'll take the scoby to grow? Any tips? Thanks, in advance!

    Great video. Except there are 2 common scientific mistakes about tea and kombucha (in one), which don't alter the instructions. First, black tea has less cafeine, not more. So, if kombucha was produced by SCOBY processing sugar + cafeine we should use green tea. But in fact it is not the cafeine that is needed, but the tannins. And there are more of those in black tea (which is oxydized tea) than green tea.

      Almost indefinitely unless it starves, but new ones will form as you brew batches so that isn’t even an issue.

      +ruhelmiah10 Actually there are ways that people have been eating them, since you end up with so many and they get so big sometimes. Some people put them in smoothies, or dry and candy them or dry them and treat them like fruit leather. some people, since they don't really want to "eat" it will dry it completely and grind it and put it in capsules for their supposed health benefits. I personally have never done any of those things, as i'm content to just use it for Kombucha xD

    So glad I came across this! When I was growing up, I remember something similar was introduced in our community for everyone to benefit.
    When a small piece of the yeast substance was placed into a large bowl, it would grow and fill up the bowl. It had to feed on water and sugar.

    I have a scoby but only a small amount of liquid with it. The only store here with kombucha tea for sale is in plastic bottles. I read everywhere that plastic is taboo. So should I not use this plastic-bottled kombucha as a starter tea. Some sites state vinegar is not a good substitute.

    I've been making kombucha for 20 years and it's a myth that you need to add a skobi. I remember buying one for my first go at it but you do not need a skobi. Trust me and enjoy.
