Chicken Stock - Use up everything!

  • When I make stock, I try to use up as much as possible, both for flavor, nutrition, and to avoid waste.
    I harvested these chickens, and they were in freezer camp, so it was time to use them. I save vegetable scraps in my freezer to add color and nutrition. Then I add any vegetables that I need to use out of my refrigerator. And I make large amounts!
    What I get is a beautiful, rich, nutritious chicken stock that I can to use all year in my recipes!

    I also save my onion 'scraps' for broth making. Especially nearing hunting season, I like to save every little veggie scrap then I have them for broth. Love your big stock pot! This was a great broth video. Thank you!

      Yes, I have beef bones, and some chicken carcasses still to make stock with. So many projects, so little time!

    Wondering if I could use red onion skins? Or would that make a funny color?? I ask because the large majority of onions I use are red and they are in abundance. Thank you Vickie!! ❤😊

      I use whatever I have, and yes this did contain a few red onion skins. The color of the stock is dark because of the veggie scraps used. For my purposes, color doesn’t matter. It is all for taste!

    Do you ever freeze chicken stock ? How long does it keep in the freezer?

      I have frozen it a couple of times, but used it up pretty quickly. I would guess at least a year.
