Dum Aloo Recipe/ Kashmiri Dum Aloo /स्वादिष्ठ दम आलू रेसिपी

  • Kashmiri Dum Aloo is one of the most widely preferred north Indian curries that is prepared with lots of spices and deep fried potatoes.
    Ingredients:
    500 g boiled baby potatoes
    3 medium size tomatoes paste
    2 onion +15 cashews nut paste
    2 tbsp malai or fresh cream
    4 tbsp fresh yogurt
    1+1 tsp ginger garlic paste
    1 tbsp coriander seeds
    1 tsp cumin seeds
    2 green cardamom
    1/4 tsp fennel seeds
    4 cloves
    1 small cinnamon stick
    10-12 pepper corn
    1/2 tsp cumin seeds
    1/4 tsp asafoetida
    1 bay leaf
    1 tsp salt
    1/2 tsp turmeric powder
    1 tsp kashmiri lal mirch
    2-3 tsp green coriander leaf
    oil for frying
    Heat a pan and roast all special whole spices i.e listed for dum aloo.
    Keep it aside and let it cool, once it gets cool grind it into a bender and make powder.
    Now Coat the boiled potatoes with some red chili powder, salt and turmeric powder.
    Heat a deep pan and add oil for frying the potatoes, fry them till they become nice golden in color.
    Heat another pan add 4-5 tbsp oil, once its heats up add cumin seeds, bay leaf and asafoetida. Saute it for few seconds till the flavor releases.
    Add onion and cashew paste, fry it till it turn pink in color.
    Add ginger garlic paste , saute it till raw smell vanishes,
    Add red chili powder, cumin powder and salt and a little water, fry it for 3-4 min.
    Add tomato paste and fry it till water gets dry.
    add yogurt , simmer the flame and mix well, add cream mix well, add kasuri methi and fried potatoes.
    mix with gentle hands, add special roasted and powdered masala, give it a mix.
    Add 1 cup of water, you can keep the consistency as per your choice.
    Bring a boil, cover it with a lid, simmer the flame and cook for 7-8 min.
    garnish it with green coriander leaves.
    Serve it with roti, chapati, paratha or puri.
