French Onion Potato Casserole | A great new side dish for the holidays!

INGREDIENTS
For the onions:
- 3 tbsp unsalted butter
- 3 large onions, sliced
- 1/2 tsp kosher salt
- 2 tsp Worcestershire sauce
- 3 cloves garlic, minced
For the potatoes:
- 3 lb russet potatoes
- 8 oz cream cheese
- 1 cup sour cream
- 3/4 cup whole milk, warmed
- 1 tsp black pepper
- 1 1/2 tsp kosher salt
- 3/4 cup Parmesan cheese
- 2 cups shredded Monterey Jack cheese
- chives
INSTRUCTIONS
For the onions:
- Melt the butter in a large skillet over medium heat. Once melted, add the sliced onions and kosher salt. Stir and sauté the onions. Adjust the heat down as needed so the onions do not burn or color but slowly cook. Continue to sauté the onions until they become dark and caramelize, 30-35 minutes.
- Remove from the heat and add the Worcestershire sauce and garlic. Stir and set aside.
For the potatoes:
- Preheat the oven to 350℉. Scrub the potatoes. Leave the skin on for a more rustic look, or peel if desired.
- Dice the potatoes into 1/2-inch pieces and place them in a 6-quart stockpot. Cover the diced potatoes with water, add a pinch of kosher salt, and bring to a boil. Once boiling, reduce to a simmer, cover, and cook until the potatoes are fully tender, 20-30 minutes.
- When the potatoes are tender, drain the water. Mash or mix the potatoes with a hand mixer until they are combined. Mix in the cream cheese, sour cream, and warm milk until the potatoes are smooth. Add the black pepper, kosher salt, Parmesan cheese, and one cup of the Monterey Jack cheese.
- Pour the potatoes into a butter 9×13 baking dish and sprinkle with the remaining one cup of Monterey Jack cheese. Cover with foil and bake for 30 minutes. Remove the foil and bake until the potatoes are warmed throughout and the cheese is beginning to brown, 20-30 minutes. Remove from the oven and top with chopped chives for a garnish.

Not sure about the mash, but all the ingredients with the potatoes before you mashed it would be yummy!
Food Network has a recipe for French Onion Scalloped Potatoes and they are incredible. Might be more up your alley if you don't like the idea of the mashed consistency.

Kaleb, what about using the liquid(milk) to get up all that delishishness from the skillet you made the onions in? Could you use a little bit to scrape up that fond? I may just try it(take the onions out and just use enough of the milk to get up all that flavorful fond. This recipe could be a lovely addition to a weekend meal like say meatloaf or a baked chicken! Yum!

I agree with you about grating your own cheese whenever possible. I think that the point you were trying to make about pre-shredded cheese is that the manufacturers add anti caking agents which affects how the cheese responds under different conditions. That is they may be OK for sprinkling across the top of something, but not a use where you are trying to incorporate it such as you are in this casserole. HOWEVER, pre grated cheese is a useful tool in the culinary arsenal of any parent who has collected the kids after work and school activities and is trying to stay one step ahead of a pre-dinner meltdown (either child or parent). I imagine that in some circumstances the immediate value of Household harmony may be greater than avoiding anti-caking agents - at least until the children are responsible enough to help grate the cheese 😁.

Oooh. Do you have a french onion dip recipe?! I’ve only known the packet version.
The pre-shredded cheese comes with anti-caking agents that keep the bits of shred separate and prevent them from pressing into a big lump. But they also prevent it from melting properly, and also just tastes off-putting.

I always eat the potato peel. The onions can take up to 45 minutes to brown. I would have deglazed the pan with a stick of Irish butter. But that’s just me.
