Converting your cake recipes for any size cake tin or cake pan

    Hi and welcome back to my kitchen. One question I get asked a lot is how to convert your cake recipes for different size cake tins. Maybe you have a recipe that tells you to use a 6 inch tin, but all you have at home is an 8 inch tin. Maybe you want to make a slightly larger or smaller cake depending on the amount of people you need to feed, or maybe you want to scale up your cake recipe for a tiered cake.
    This week I'm going to go through exactly how to work out how much ingredients you will need for any size cake tin.

    The cake I used was my vanilla sponge cake recipe.
    For the 6 inch cake I used:
    340g Self Raising Flour, 340g Butter, 340g Caster Sugar, 4 eggs & 2tbsp Vanilla Essence / Flavouring
    It was baked at 180 degrees Celsius for 45 minutes
    For the 8 inch cake I used:
    612g Self Raising Flour, 612g Butter, 612g Caster Sugar, 7 eggs & 3.6 tbsp Vanilla Essence / Flavouring
    It was baked at 170 degrees Celsius for 1 Hour

    The King Arthur Baking site had a good tip to prevent your edges from getting overdone. You moisten paper towels and fold them lengthwise to match the pan’s height. You wrap them around the edges and keep in place with aluminum foil. No change of oven temperature is necessary. Sandra Bullock’s sister made the video. Just another idea. Good baking.

    I am new baker, I wish don't want waste a lot pf items on trying so I prefer using small size amount of tin. This method really gonna help me, I event went to your page and download it. It don't even ask me for log in or sign up membership all were available for free!!! Thank you so much 😊😊😊😊

      For the 8 inch how many minutes did you bake yea? And how many grams did you divide the batter into 2 tins?

    Fabulous, I finally understood it! So I'm going from 2 × 6" rounds to 2 × 8" rounds (already worked out for us). Thank you Lynz, I'm going to post my comments here after I've made them!

      What if the difference between the 8inch and 10 is 1.557. Am I rounding that up to 1.6 or leaving it as is?

    Would you be able to do a butter cream conversion?? Meaning how much buttercream would be needed to fill and COVER each sized cake

    Lynz you really are amazing thanks you a million times, because I can't convert I usually stick to the cake size in a recipe.

    Very informative and very well explained.....thanks a lot. But just 1 question , how to adjust baking powder and baking soda, as they are always in teaspoon measurements?

      convert the teaspoon measurements into grams, to make it easier. you can do this online on google

    I was even searching for information on how to convert from round to rectangular ! I wonder if it's possible? And if so is it the same procedure??
    Anyway, I will give you tomorrow an update if my cake will come successfully baked based on the conversations :)

    If i make cake layers in two batches, is it okay for the rest of the batter to sit on the counter?

    Thanks so much for this ! I tried making this last night and loved it but I've gone to ice this morning and the cake is too dense and stodgey and undercooked in places. Not sure where I went wrong, I'm thinking perhaps too much lemon juice and too high heat in the oven? Any tips for when it comes out like this. Going to try again today ! Thanks so much

    My cakes have been baking at different heights as an example, I baked a cake today and left side of the cake literally was quite a lot smaller the right side, any suggestions on how to bake it so the height is the same all around? X

    I teach maths in a college and it’s sad to say but A lot of adults don’t have the skills required to work this sort of problem out for themselves 🙈 the only thing you skipped is the amount of time taken to bake. I know this is not as easy to work out but some advice on this would be helpful.

      Hi June, I am so glad its helpful. In regards to the rectangular cake tin it is actually exactly the same process. You just need to work out the surface area of the rectangular tin and use this as the number for your new tin.

    Hmmm, it might not always work, also depends on the depth of the tin. These conversions will only work if you make the same depth as well.
