Ok, a couple of weeks later, and I'm convinced, Freezing it is the best. Coconut stays firm and moist. In the water the coconut tends to soak up a little moisture and become softer. Also added bonus, the Thin layer of brown skin around the coconut just pushes off after it has been frozen for a while. : )

In that case pls use dried coconut (desiccated coconut)

It comes out the shell easier when you crack them open heat the oven oven at 350 for about 20mins then turn it off and put them in the oven it will separate the coconut from the shell then use a butter knife to pop it right out
