Usually, you will use leftover rice for fried rice. This is a good way to use up leftovers, and the consistency of the rice is a little different than freshly steamed rice. It's a bit dryer, and the grains don't cling together as much, which means that you'll get a mouthful of every ingredient with every spoonful, instead of rice just clumping together with the eggs.
Nice first attempt. Your garlic is WAY undercooked though. You need that slight bitterness to offset the sweetness of the peas. That's what makes it SPECIAL.

I remember when UA-camr Should I Series still made videos of him making and trying recipes back then, this was a highly requested recipe of Kay’s for him to try. He’s gone now probably, so it’s nice to see someone else try the recipe that made Uncle Roger flip his lid.
He’s still around. I saw a comment where he said he would come back and make videos when he pleases, that he works on his own time or something like that. I believe he got fired from the restaurant he worked at and that sparked the change in his videos/live streams and eventually lead to the absence of content. I throughly enjoyed his videos, I hope he does come back.
Man I miss his videos. His family owned the restaurant and they had to sell it. Tried to buy a new one but the deal fell through. He vows to return. I'm still subscribed.
"Are you supposed to use cooked rice?" that's a yes. I mean you could probably get away with doing it rissotto style but you'll still need a ton more water than what's in with the peas.
3 cups of water per cup of rice minimum if you wanted to try a risotto type method, but even then, I don't think you're gonna end up with properly cooked rice. Fried rice needs the rice to be cooked and cold, and is best when any starch is washed out before cooking. It's a way to use up leftover rice.

Never made fried rice and you have a wok like that? Crazy. Yes you should use leftover rice. I've found as long as its cold its ok to use. I've used same day rice after cooling in the fridge for a few hrs with good results. If you use warm fresh rice when you go to fry it it just turns to mush.
they usually steam rice and then fry it in a wok/frying pan with an egg slurry on low head which makes the rice that iconic yellow color! or for brown fried rice, its just soy sauce and probably some oyster sauce!

One inaccuracy Kay doesn't use salt or pepper. Also your garlic wasn't fully carbonized yet so you needed to cook the garlic for longer to get that authentic charcoal bitterness in the dish.
I Love that whilst frying the rice, he instinctively was wanting to have cooked it. And just thinking it was cooked in Kay's video, because it's so outlandish that someone would fry uncooked rice lol

Fried Rice is actually considered best if you use yesterday's rice. I haven't looked into why but I've heard it from multiple chefs on UA-cam at least.
Absolutely. You *can* cheat it by cooking the rice and then chilling it for an hour (spreading it out in a thin layer to let as much moisture escape as possible) but leftover is ideal.

Yep lol, Fried Rice is made with 1-2 day old (cold) steamed rice, and a lot more seasonings and oils (e.g oyster sauce etc.) The lunch meat probably didn't help the flavor profile either lol

One way to fix this would have been to add hot water slowly and stirring to cook the rice. Also the lunchmeat could be lightly fried on its own to help improve flavor and texture, then the eggs, then the peas and finally rice added in to the stir fry. Also frying spices makes them taste way better, particularly black pepper, basil or oregano, among others. But props to toughing it out to add authentic suffering.

Instant rice, instead? Sweet peas and not nearly so much, instead? The only fried rice I've had from various restaurants has never had meat, other than bits of scrambled egg, and it was a frozen peas and carrots blend (sweet and snappy peas).
Just FYI, you CAN put raw rice on a pan and toast it, so long as you add water to cook it afterwards. it's ready for the water when it smells like popcorn.

This whole recipe could be salvaged just by adding broth to the rice and garlic and steam it until it is done, then continuing the recipe as normal. And you know... season it with salt, haha

Like you said, you use day-old steamed rice (not raw), and it needs soy sauce, sesame oil, and preferably white pepper for a better, more authentic flavor. Uncle Roger would recommend MSG, too.

Usually, if you were making fried rice, you'd boil it first. drain it, then fry the soft rice. But Kay didn't, that's why it was, "a bit crunchy." Being Honest Tries, I'd say you were correct to do it like she did.
Whew boy. You can make “Mexican rice” kinda like risotto… fry the raw rice in oil with some onion/garlic just to toast, then add tomato sauce and broth and seasonings. Makes it a bit creamy and really darn good. That way Mexican rice is a type of fried rice but not what we all call fried rice. I feel like Kay is trying do both ways but should have some stuck to one way. BUT. Hey as long as she likes her cooking. She seems to be really sweet and getting her kicks cooking so I hope she keeps learning. (Ps in my home we call “Mexican” rice just plain “rice” and yet we call white rice “white rice” lol)

You're definitely supposed to cook the rice first, fry it up with some oil and sauce (soy sauce is my preference) and I'll put in onion, garlic, egg, chicken that's already fried up with some soy sauce and then add green onions on top. I was honestly shocked when I watched Kay pour raw rice into hot oil 😬 dear lord.
Fried rice does typically use day old, or yesterday's steamed rice - and while I'm sure that making use of all the rice is part of the purpose, it's also better to use day old steamed rice as fresh cooked rice has too much moisture, and will lead to mushy rice product if fried immediately. Really, just slap some cooked rice in the fridge for a day and you'll have perfect frying rice.
Fried rice you fry it first to brown it yes, but then you add water and boil it for 10 minutes to actually cook the rice. Then you add all the extras, eggs peas when the rice is nearly done.
Yeah I've always heard left over cooked rice is great for fried rice, usually left for a day so its dried out a little, plus it also no waste as all the rice gets used!

Whew boy. You can make “Mexican rice” kinda like risotto… fry the raw rice in oil with some onion/garlic just to toast, then add tomato sauce and broth and seasonings. Makes it a bit creamy and really darn good.
That way Mexican rice is a type of fried rice but not what we all call fried rice. I feel like Kay is trying do both ways but should have some stuck to one way. BUT. Hey as long as she likes her cooking. She seems to be really sweet and getting her kicks cooking so I hope she keeps learning.
(Ps in my home we call “Mexican” rice just plain “rice” and yet we call white rice “white rice” lol)

You're definitely supposed to cook the rice first, fry it up with some oil and sauce (soy sauce is my preference) and I'll put in onion, garlic, egg, chicken that's already fried up with some soy sauce and then add green onions on top.

Fried rice does typically use day old, or yesterday's steamed rice - and while I'm sure that making use of all the rice is part of the purpose, it's also better to use day old steamed rice as fresh cooked rice has too much moisture, and will lead to mushy rice product if fried immediately.
Really, just slap some cooked rice in the fridge for a day and you'll have perfect frying rice.
Fried rice you fry it first to brown it yes, but then you add water and boil it for 10 minutes to actually cook the rice. Then you add all the extras, eggs peas when the rice is nearly done.

Yeah I've always heard left over cooked rice is great for fried rice, usually left for a day so its dried out a little, plus it also no waste as all the rice gets used!
