I would add learning software development fundamentals - its a common complaint for data scientists. Also, more job opportunities in MLE, rather than data science.

@@ShawhinTalebi learning MLOps will probably in effect teach them, so a course on that. Zoomcamp has one for free.
Otherwise I think learning about modular code and OOP concepts in python should suffice
