If I have project folders that get created for new jobs when we get them from clients, where would I place this newly created document you showed in the video to where it only needs to be made one time? If this document gets created into existence once these project folders populates, will word files that get dragged into these folders auto update to the already existing document that was shown from this video?
Does any of this make sense? Please let me know and I will try to clarify better.
What happens if the source document gets moved or renamed?
Is there a property of the document that you can edit (via vba from either Excel or Access) to point to a new document?

I have old document with tex and tables, and cannot make it work somehow (after Paste Special, in dialog box, and Paste Link is not active). Hoewever when I create a new document .docm and follow your instructions it works fine.
