- Friends, today I want to share with you a wonderful recipe for a perfect cake with plums and nuts. Fluffy chocolate sponge cake, delicate meringue with nuts and aromatic plums will delight you from the first bite.
Drunken plum:
approx. 500 g / 17.6 oz of dried, soft California plums without seeds
250 ml / 8.8 oz of rum (light or dark) or vodka
Soak the plums and leave them overnight
Dark sponge cake:
4 eggs (size M), room temperature
150 g / 5.3 oz sugar
90 g / 3.1 oz wheat flour
30 g / 1 oz cocoa
1 flat teaspoon of baking powder
Walnut cake:
250 g / 8.8 oz walnuts
5 egg whites (from M size eggs), room temperature
200 g / 7 oz sugar
1 tbsp. whole wheat flour
Pudding mix:
500 ml / 17.6 oz of milk
4 tablespoons sugar
5 egg yolks (left over from the walnut cake)
2 tbsp corn or potato starch (or 20 g)
2 tbsp wheat flour (or 20 g)
300 g / 10.6 oz butter, room temperature
Chocolate glaze:
100 g / 3.5 oz butter
5 tablespoons powdered sugar
3 tablespoons cocoa
1 flat tablespoon of gelatin powder
3 tablespoons of water
5 tbsp sour thick cream (10- 18%) or 10% natural Greek yogurt type
