This channel has crawled right into my favorites in no time. Stumbled across it about 6 months back watching you cook a steak and some fries at camp. Been a fan since. Cheers.
The closest thing we have up here in the US (that I've heard of) is Bannock. I'd never heard of damper before I started watching some Aussie bush cooking on the tube. Course I'd never heard of jaffles either but once I saw the iron...aha! hobo pies! I baked up a couple dampers in the camp oven a while ago and they really are easy. I may try this one, too. Thanks Harry.
Will 100% give this a go. The missus isnt a massive fan of my damper, but i reckon this will change her mind. You should chuck all these ideas in cookbook, id buy it.
Back in 2000 I walked from Sydney to Bundaberg. Damper was my staple. I made two every evening. One savoury one sweet. Baking powder, bread improver and milk powder your damper experience will jump through the roof. Cheeseburger damper however is next level. :) keep em coming.
I can't help associating golden syrup and butter with damper. At first i was put off as it wasn't sweet and I couldn't wrap my head around the concept but a new pathway has been created in my brain. The connection was made after I saw the bacon and i had an immediate reminder of maple bacon and it all clicked together.
Certainly a new twist on plain old damper. I have an awesome boiled fruit cake recipe that I have been thinking about filming. Trouble is, if I film it, only half a dozen people will get to see it and it is a fantastic recipe. It is a bit rare to cook cake while camping but this one is easy and almost fool proof - I know because I can make it :) If I can dig it out I will send it to you and maybe you might like to include it on your channel.
@@terrykerslake2675 Hi yes I did, ended up doing a video showing how to make it : ua-cam.com/video/_bj8UnR1DTg/v-deo.html&ab_channel=WesternAustraliaNowandThen
Hay mate really enjoying the channel. Found it about two months ago and been trying your recipes. Loved the bush ribs - doing it all in the back yard fire pit ATM. Also done a pork belly in the camp oven using the rib recipe turned out great !! Keep em coming brother !!!
You are like a 3 star Michelin chef compared to Malcom Douglas and I loved watching him throwing shit around and coming up with something good in the end!
Mate. Your a bloody genius. That’s an awesome damper idea. I love damper of all sorts and have never seen one like that before. Will have to try it. Eventually lol.
Hey Mate, I like this idea, I think I might try this with a Mexican flavour.. well done....bet your itching to get out into nature... Can you make bush donuts??
I always work on the principle that bread doughs are "done" when they clean your hands for you :) Also 100% with you on onion being a mandatory topping for burgers.
the cooking the top first is a bloody good idea! iv'e buggered up far too many dampers i would like to admit by throwing it on the fire. keep up the good work
Hooly dooly Harry...reckon that's almost the best damper I've seen.. might chuck a raw egg on top of the patties..Man's 5 main food group: flour (veg), meat (protein), cheese (dairy), bacon (the other protein), and ummm........beer.
"Camp Bread" I used to get tortilla mix (White Wings) that had an alternate recipe that made something identical to your dampers. That cheeseburger version looks awesome! Do you have to cook the burgers ahead?
Hey Harry, quick question from Germany! Would you buy the ARB awning in this length again? Or would you prefer the 2000mm one. I believe you have the 2500mm length and I was wondering if you have trouble with the ends catching branches as they hang a bit over the Cruisers’ roof. Love your content! Thanks!
"Vessel for shit loads of butter" never have truer words been spoken Why the hell do dogs love uncooked or even cooked damper/scone mix so much, my dogs will scoff down any if its within mouth reach..
Banock in the UK which i think derives from scotland but not 100% sure , Ray Mears, hallowed be thy name, prob introduced it to the general public , there is an episode where he makes a fruit one and soaks it in whiskey .
I know you're onto better products but can you tell me your thoughts on the king's cooking gear? Just looking at something to get started and thinking of the spun steel camp oven from them cheers! Also appreciate the videos, trying out your ribs recipe soon
Fire to Fork true I guess but it gives a buffer. And then you wouldn’t need to put it on the heat on the bottom in the end to finish it.. I use a stainless semi solid trivet (drilled with holes) and it comes out perfectly every time. I go about 85/15 % heat top and bottom Nice job though Harry
Plenty coming up. Actually, most of my recipes are GF- pulled pork, bush ribs, steak & chips, even the fish wrap can be made GF (just use GF rice bubbles cereal crushed up as crumbs)

Ahhhh bannock, just looked it up and it looks very similar, that's great to know.

One of the best camp fire cooking recipes I've EVER seen. Love it

damn it .. i'm hungry again, BTW in scotland i guess the closest we have is Bannock .. but i will make them both .. for research of course
In England we call damper ..... Damper. But to be honest not many people have heard of it.
Thanks Harry for another good episode.
Absolutely mouth watering when you cut through it!! Thanks for the damper burger idea and tips to making it!

Beer timing is the best way to cook bloody legend.

I'm making this tonight. Looks awesome.
Nothing better than Bacon on the Braai....And obviously a T-Bone and lamb chops
Love the vids
Greeting from Namibia
My new favorite cooking term "about a beer and a half" haha! Keep it up legend!
Loving the cooking in isolation series Harry, 👍👍
That looks so good .
Loving your videos mate keep doing what your doing, cheers 🍻

I am totally trying this! What a cool idea.
It’s 5:25 here in Victoria and I’m glad it’s tea time because you just made me very hungry 😋
A great piece Harry! Thank you :)
Bacon double cheeseburger - finally Harry does some gourmet cooking
Hooly dooly Harry...reckon that's almost the best damper I've seen.. might chuck a raw egg on top of the patties..Man's 5 main food group: flour (veg), meat (protein), cheese (dairy), bacon (the other protein), and ummm........beer.

Bring Sam back in the fold! You two are funny as hell to watch!

I believe you have the 2500mm length and I was wondering if you have trouble with the ends catching branches as they hang a bit over the Cruisers’ roof. Love your content! Thanks!
I’d definitely get the long one again mate
"Ohh yeh, oh yeh" says it all. That was an interesting twist. Cheers Harry
Oh lord that looks lovely!
Hell yeah, that looks delicious! I'm definitely trying that some time
Will have to give it a go . Looks awesome 👍🍻
Keep them coming mate. Loving the latest covid vids 👍
Plain damper is overly exciting. But i love making a mixed herbs and minced garlic damper when i cook a lamb roast in the camp oven.
Keep smiling harry, love your work.
Nice one Harry. How about a damper for Coeliacs?
I have tried a few - never found one that works, but I'm very open to any recipes for them!
Fire to Fork Maybe not a damper but a corn bread doing the same thing as this one?
jalapenos would be awesome in that harry
Damn mate you are a genius - thanks. Im going to add garlic and mushrooms as well - and finish it off with a nice cigar - and more beer.
You are one of the most positive persons I’ve seen on UA-cam.
Cheers mate!
my mrs is coeliac mate, try the gluten free flour brand- well and good, really good stuff, its the closest you'll get to non-glutard stuff
Keep up the great work mate. Will be trying that for tea real soon.
Definitely got to try that looks so easy and extremely good 😂😂😂👍

Is this recipe in your Fire to Fork cookbook?
I know you're onto better products but can you tell me your thoughts on the king's cooking gear? Just looking at something to get started and thinking of the spun steel camp oven from them cheers! Also appreciate the videos, trying out your ribs recipe soon
I run the southern metal spinners camp oven made in south aus- they are basically the same price as Kings but local, you can get them from Snowy’s 👍
Looks nice made my mouth water
That a top meal. Thanks heaps for sharing. cheers.
Just a ripper idea and so simple
it's been about a beer and a half love that!
Not bad
My mouth watered
Why aren’t you using a trivet?
Cheers mate! No need for a trivet if you get the heat right on the bottom
Fire to Fork true I guess but it gives a buffer. And then you wouldn’t need to put it on the heat on the bottom in the end to finish it..
I use a stainless semi solid trivet (drilled with holes) and it comes out perfectly every time.
I go about 85/15 % heat top and bottom
Nice job though Harry
Probably been asked before, but where is that epic knife from?
There is a link in the description mate 👍👍 it’s a ripper
You've ruined me bloody diet Harry lmao to much good food though love it
I think you use the same recipe ( floor, water, salt) cooked flat to make hardtack.
Is this is your book?
That is a Great idea. Ready to get back to the forest.
On point. Im goung to give that a crack this week 🤙
Does “spun” more describe what was going on during this episode
big fan! keep it up consistent
i think youve outdone yourself here harry, also has that dint always been in the back of brick?
Cheers mate, yeah it has been there a few years
Nice one again Harry. Can you buy Australian Rice Bran oil? I can't seem to find any.
Should be easy to find mate- 99% of supermarkets have it
Woolies supermarket had some tonight when i went shopping. 8 bucks for a big carton of it.
Thanks Harry. I look forward to trying these recipes when this nonsense is over! Good onya! Oh, stay safe!
Nice!!!! Im gunna make that. We need Sam back though lol. Stay safe. Cheers Steve
Gotta try this, also what knife do you use?
I’ve chucked a link in the description mate 👍
Hi just curious, do u prefer a cast iron camp oven or the thinner spun metal type to cook with ??
Definitely the spun steel for travel- cast iron is nice but a pain to carry around
make a fire to fork cookbook, seriously I'd buy it 30-40 bucks no problem.
yum, nice one mate!
we call it it damper here in nz, in saying that alot of our foods are the same except guys like that rank vegemite, marmite far superior
Bannock - damper is called elsewhere in the world.
Thanks love it.To try as soon as we are "free"
French mustard did you say?
french’s brand 👍
Yummo that looks good
Don’t really like damper, haha your rite it’s really just a bad scone until you add lots of good crap to it😉
3:29 yep
put oil on your hands it wont stick
I don’t understand why you had to clean your hands twice? Oh Ronan got ya 👍🏻
Another coeliac ! How about some gluten free bush cooking videos
Plenty coming up. Actually, most of my recipes are GF- pulled pork, bush ribs, steak & chips, even the fish wrap can be made GF (just use GF rice bubbles cereal crushed up as crumbs)
Legend 🤤
I believe in Britain it's soda bread
Damn that looked fekin nice as man lol.
Looks good hope your backs doing ok
Well that’s a bit different🤠👍🇦🇺
Looks the goods 👍
genius !!!!!
Cracking burger, you sound a bit English now an then.
Howdy mate I'm also celiac ya can't do a gf damper or any other gf recipe s some time???
Most of my recipes are GF, I need to work out a way to label them. Might do a playlist of them
umm....Yum!
😋 yum
Not bhed good damper!🥰🤩🤩🤩
The next step to making your channel better is to buy a Mic
I’m using a $1400 boom mic! It’s just a bit echoey and noisy there- that’s the nature of doing it in the city
not gonna lie.. that bread didn’t look too appetizing
