Good question, because oxygen atoms prefer 2 bonds the deprotonated form of COOH has a negative charge associated indicating that one of the oxygens has electrons it wants to share. Whereas when the C-N2 is protonated the N atom has 4 bonds and nitrogen prefers to form 3 bonds, so the postive charge indicates that it is sharing more electrons than it usually likes to. Hope this helps.
why are we using the two carboxyls for PI for Glutamic Acid instead of both "wings," I know you said two is more than one but i fundamentally do not understand why
I do not see why you included this one as #40 in the General Chemistry playlist. It assumes that the prior three Titration videos have been seen for it to make sense. All the while Acids and bases have not been covered as yet. Acids and Bases are covered in #55, so the cart has gone before the horse. Given all that - it is still an awesome presentation.
