When trying to get the exact voltage you want out of such a circuit, somethings it is hard to do with the course adjustment of a 10k pot. A great idea is to put a 500 ohm potentiometer in series with the 10k pot and then you can do a very fine adjusting to get the exact output you need.
or maybe better get a multi turn 10k pot then you have only 1 control and you have a fine adjustment at the same time
Or maybe better get two potentiometer in series, 9k and 1k with fine adjusting.
The resister near vacant screw hole is it 100ohm?

Billions of people show that same circuit on YT and they all play with the voltage with bulbs , motor and led light like a kid with his new toy .( the new toy is TY and subscriptions which may bring some money .But NO ONE is capable to show the real HIGH CURRENT going out from it .
WHY are you not able to show that 20A out of it, and a load that match the 20A to show that the circuit can really handle it ?

If there is no load (anything using the current like that light or the bulb or the motor) these pots can’t handle the current if left stand alone. If the current flow is high you need a better pot to withstand high current in stand alone

The output voltage won't go to 40v as advertised .
No, it definitely won't because the design is very poor. It is nothing but a crude "source follower" or "common drain amplifier" placed after the LM317 and completely outside of the actual voltage regulation control loop.
This is nothing more than a crude source follower circuit. The voltage will be adjustable but not well regulated and will vary with load current. Properly designed the MOSFET could be placed within the control loop and voltage regulation with load change would be quite good. Good current limiting is problematic.
You use wrong resistors.Try electronic book to learn what kind of right resistors your project needs.
