Loong Sifu noodle quality is by far the best I've tried in the country. Of course I can't say I've eaten at every corner of Mal. The texture is far better than any hawker's or restaurants around here; al dente ( in Wonton meen spectrum) while no smell of alkalized water. I only wish his sauce is a little more palatable. Love his Wonton as well, they always come in large chunks. But I do feel he needs to adjust his pricing a little considering the venue.
Thank you for sharing your thoughts on Loong Sifu's noodles. From your description, it seems that the quality of Long Sifu's noodles is indeed excellent.

The bamboo worries me a bit. The sifu might use one end of the bamboo today and the other on another day. His butt sweat or traces of fart might get all over the dough.
