How to Make Elotes

The great thing about elotes is how little there is to them. To describe the dish is to give the recipe for it: grilled corn slathered with mayo and cheese, spiked with chili powder and lime. But ease is not the seat of elotes’ power, flavor is: sweet corn, salty cheese, unctuous mayo, caliente chili powder, and lime zing. Plus it comes on its own stick. Elotes are the total package.
