I have only caught them once but have not been at it long (300 mile drive to the beach). Fillet dust with flour, salt, pepper with skin on and pan seared. It was the best fish I have ever eaten. I have seen people call Pompano skin Ocean bacon and they are not kidding. Crisp and delicious and adds an extra layer to the clean taste of the meat.

911 Tech yeah. I caught one surf fishing and we filleted it. It was what got me into saltwater fishing. It tasted so good

Great video ! Man, pompano are the best eating fish I've ever had. There's something I've noticed, most anglers don't release legal size pompano and they keep the full limit allowance, ha ha...Looking forward to your next adventure!

Everyone has their recipes, try some House Autry breading deep fried fish nuggets in peanut oil. There aint nothin better! except maybe a little malt vinegar and coleslaw.

Hello Nicholas! Question: Is it still possible to successfully Pensacola pier Pompano fish in late November?
Didn't fish from Pier back the week of May 11, 2020, but used Goofy Jigs to Pompano fished from the beach. Didn't catch any Pompano those two days but neither did others fishing on the beach using live bait for Pompano. Drove to over to Navarre Beach area that week of May 2020, and met one fisherman who had caught a few very nice Spanish Mackerel.
