Like any burger, it's entirely up to the eater whether to put on what. Since Frankie used ketchup in the sauce, he likely didn't feel the need to repeat the tomato in whole form. Me, I'd triple the patties and leave out the onions and lettuce, keeping the sauce, pickles and mustard. Serious YUM!

Why isn't the meat sticking to the spatula that you use to press it down? Whenever I've tried making smashburgers at home, that happens to me . . .
Oil it up prior to smashing or add a sheet of parchment paper between the meat and smashing tool.
