- I love making Spatchcock chicken especially with this amazing Peri Peri marinade made from scratch.
Cooked using the Kamado Joe JR. with an indirect method at 180c for 1hr 45mins.
Ingredients:
Spatchcock Chicken
Marinande:
1 whole Garlic
2 onions
Bunched mint leaves
1 bell pepper
5 chilli peppers
Olive oil quarter cup
1 teaspoon Salt
1 teaspoon black pepper
2 table spoon Paprika
1 teaspoon cayenne pepper
1 table spoon mixed herbs
Blender and rub onto the chicken and let it marinade for at-least 3 hours. best over night.

Great vid!! Btw the reason why the marinade came out of the food processor’not red’ is because the blades mix air in. This is the reason why canned tomatoes for pizza sauce should be crushed by hand, food mill

Great video but please check your food prep, you just used the same board to chop veg on as the raw chicken, cross contamination is very dangerous. Only trying to help 👊🏻
Thanks dude! 100% agree on that comment and will definitely be more careful. As the veg was used for the marinade which was applied directly on the chicken hence why I wasn't bothered. Thanks for the support 👍
