Kamado Joe Jr Tandoori Chicken

  • Here's a great way to put some smoke and some fantastic flavor on chicken with your Kamado Joe Jr!+
    Tandoori Marinade/Baste Recipe:
    1 1/2 cups of plain yogurt
    Juice of 2 lemons
    zest of one lemon
    3 tsp minced ginger
    3 cloves minded garlic
    1 1/2 tsp ground coriander
    1 tsp paprika
    1/2 tsp crushed red pepper flakes
    1/2 tsp ground cumin
    1/2 tsp turmeric
    1/4 tsp cayenne pepper
    Mix completely and refrigerate for 1 hour.
    Reserve 1/2 of the marinade for basting during the cook.
    Marinate chicken pieces in 1/2 of the marinade for at least 3 hours or up to overnight.
    Preheat your grill to 250°F and set up for indirect cooking with one chunk of your favorite smoking wood. Cook the chicken pieces over indirect heat for 90 minutes. Remove the heat deflector and open the vents and let the grill get nice and hot. Put the chicken back on the grill and baste with some of the remaining marinade. Cook for several minutes per side, flipping frequently and basting with each flip until you get a nice char on the chicken...

    Great recipe, thank you. I tweaked it a bit using chicken legs and diced chilli. Worked great...delicious.....I used vitex lump charcoal and cherry wood chunks.....

    Score the chicken for better marination. Use Kashmiri Red Chili Powder instead of Cayenne. Add ghee or veg/olive oil into marinade as well, this will help with it sticking to the grill which appears to have happened with your cook here and allow for better browning. Don't forget to squeeze lemon and/or lime wedges on it while eating.

    Always great videos John. Great simple tandoori recipe. Love that on the grill. We try to make it every once in a while. Yogurt and spices blend great with chicken for that smoky/tang flavor. The final char on the end adds depth and great color. Keep the videos coming.

    Hi John, do you state your temperatures as dome or grate temperatures? I'd imagine that if you're doing these videos for kamado joe it's dome but I do often get confused with different videos/recipes as to what temp is meant to be used. Thanks very much for your reply.

    Just cooked a dismembered 12lbs brined turkey on my joe jr using the 2 end pieces of my weber go-anywhere grill grates.... unreal flavor/juiciness and copious amounts of lunch-meat!!!
