High-Protein Beet Vegan Gnocchi 🤌🏽

I saw this recipe by my friend @thatveganbabe , and I knew I wanted to make it, but give it a Natalie touch and add BEETS! #Ilovebeets

Here’s the recipe of my variation…
Makes 3 servings
Macros per serving: 26g P/ 56g C / 5g F
Approximate 373 calories

⭐️Ingredients:
👉🏽170g frozen beets, thawed
👉🏽60g onions
👉🏽4 garlic cloves
👉🏽300g extra firm tofu
👉🏽180g all-purpose flour
👉🏽1 teaspoon salt or to taste

⭐️Steps:
1.In an air fryer, roast beets, onions, and garlic cloves for eight minutes at 400 degrees.
Set aside and let them cool completely before moving on to the next step.
2.In a food processor, process the tofu, the beets, onions, garlic, and salt.
3.Add flour, and mix until combined.
4.Place dough on a floured surface and roll into a thin log. Cut the dough into small bite size pieces.
5.Place the gnocchi in boiling water and cook until they float to the top (takes about five minutes).
6.Pan fry to make them nice and crispy on the outside and chewy on the inside. Add your favorite sauce and enjoy. The star of the show is the gnocchi, and I didn’t want to mess with that. I drizzled a little bit of toasted sesame oil, micro-greens, and sesame seeds.
