Cook/fisherman here to explain why you liked the tuna taste test tin over the jar, the test tin was bonito vs tuna here. Bonito is less tough and dry than tuna, it has a bit more fat and flavor as well. I can my own bonito in garlic olive oil and it never comes out dry. The main difference is size, bonito is a much smaller fish than tuna, smaller muscle fibers and more layers of fatty, fatty goodness. Depending on the location the bonito species can be either little tunny (Euthynnus alletteratus) also known as false albacore , skipjack tuna (Katsuwonus pelamis) or bonito mackerel (Sarda sarda). Ventresca de Bonito is bonito belly, the fattiest part of the fish. I'm the guy from Reddit that got scammed with menhaden, by the way. Loving your vids, keep rocking them 'deens!

Bonito cakes (think spicy crabcake but with bonito meat) are delicious dipped in tartar sauce. A traditional way to eat them is Croquetas de Bonito, basically make a thick bechamel sauce with butter, flour and milk, add the bonito, sauteed carrots, leeks, onions, whatever veggies you want. Season and refrigerate, the sauce should turn into a solid mass when cold. Just cut or form the shape you want, dredge in flour or breadcrumbs and fry.

i'll never get tired of seeing people expecting salt-cured anchovies to eat like deens. someone else has likely already said it but just in case: those are excellent as a pasta sauce ingredient or an intense condiment, but the only thing they have in common with deens is being a little fish product in a tin. you have to get "white anchovies" or others that are explicitly whole in oil or spring water for regular fish flavor. they're only recently showing up in stores near me in the U.S. as far as i'm aware and i know patagonia sells some. also that anchovy jar and tin you had are the same product, but jarred is way more convenient when you're normally only ever using like 1-5 fillets at a time.
Ortiz is one of the best brands you can find for canned seafood products. Mussels, tuna, anchovy, bonito, melva, mackerel, and many others are all products that with extra virgin olive oil are excellent for health because they have omega 3, vitamins A, B, D. Regards ¡

Almost a crime to cook with top-notch anchovies. Use $2 a tin anchovies for that, like to melt with garlic and onions. Or, use fish sauce, also known as Garum or Colatura, which is really anchovy sauce, for cooking. Salute to the anchovy.
Eating anything canned is always depressing, prison food. Yes its healthy and all that but it if you had choice you rather have fresh fish thats steamed or grilled

@@SlowJabroni yes, actually in the US it is called Albacore, the species is " Thunnus Alalunga " which means "long finned tuna".
Also, "ventresca de bonito" its the fatty belly part, like Tuna Toro in sushi but in a much smaller fish like the bonito del norte.

What I do with my mid range tuna is I mash it up with the oil it comes in, and then it's not dry at all! Learned this from a friend.

5-minutes in hot or boiling water and those Ortiz stuffed piquillo peppers are upped a level. That's how I do mine. Works for other tins too.
