- This is a demonstration in a real KFC restaurant in Louisville, KY. While they didn't give away the secret recipe with the famous 11 herbs and spices, they were happy to show exactly how KFC chicken is made.

Yeah I'm a cook there and we get four bags of mixes to prepare the bread. One bag just says: Original recipe seasoning. Then a huge sack of regular breading. The other two say enhanced milk and egg mix and breading salt.

i work as a cook at kfc. this aint how we do it in my store.
1. get bags of chicken (as much as the manager on duty asks.)
2. dip the chicken into water
3. place chicken into flour mix (flour, seasoning, salt, milk n egg mix)
4. move chicken around in flour until coated
5. drum sticks are done twice for extra krisp and flavour
6. all chicken put in a metal cage
7. cook in pressure cooker for 15minute cycle
8. place cooked chicken on racks and keep in hot box things to keep as fresh as possible.

Recipe is pre bagged they do not add anything chicken seasoning comes in a big white bag that literally says KFC secret blend of herbs and spices u RIP two of them open toss them in the bin grab your chicken from mesg bag cut bag dump chicken coat once for original coat twice for extra crispy. Me I like to coat my chicken four or five times and fry it at 325 for as long as necessary which could be anywhere from twelve to twenty min depend on size and weight of chicken.

It's the same way we make chicken fingers at jacks and they take about 3:30 - 4 mins to cook. You put the chicken in battered flavored water and then throw it into orange batter and then you stick the chicken in a basket over next to the fryers from front to back (at 330 degrees) and then swift all the hardened batter into a shaker while the bottom container catches all the smooth stuff. The only difference is the chicken they get and the seasoning they put on it. But its basically the same concept. Also this is bone chicken, it's made and cooked a little differently. They didn't show you where they take out the blood from the thighs to make their chicken look "pretty", also got to check for feathers on the wings. Bone chicken usually is mixed in white batter and takes about 16 minutes to cook in the fryer

actually he did not do this, but generally when they coat the chicken with flour mix, they dip the chickens in to a liquid. ı just curious about that.
Things different over here in the uk chicken is 10-10-10 and only chicken, legs get dipped in water and coated again and you twist the skin on the leg to prevent it swelling and bursting.

The chicken pieces are now called IMOR COB..Injected Marinade Original Recipe Chicken On the Bone.....which comes frozen from the supplier....it then takes up to 12 hours to defrost and reach 0 degrees celcius. It must then rest for two hours to ensure even thawing. Once the chicken is taken to the breading table it is dipped in dip basket to remove the marinade.....it then gets breaded following the 7-10-7 method
It's a secret blend. Even the people cooking the chicken don't know it!

Its got to be water rather than milk, because fats fry, and KFC is never too crispy and yet cooked thoroughly in the middle. Either that or they use skimmed milk and egg whites rather than the yolks, relying on the fats from the meat to crisp the coating ever so slightly. You see, the fats don't disperse till they are forced to at high temperature. My gosh, that's been doing my head in for ages, thank-you people. :D

For original recipe, the proper procedure is he should press the chickens to the powder so that the original recipe powder absorb into the chicken before he place it on the tray for cooking.
Some questions come to my mind: is the chicken brined before reaching the stores? What happened to the wash? (I though the process was dredge, wash and dredge in flour again)

Pressure Fryer might make it unnecessary for a pre-brine, but I kind of suspect they do a pre-brine before it gets to the restaurant.

Hi there! I run a KFC in South Africa....our breading procedure is completely different.....Scoop and Fold 10 times.....Press 7 times clockwise....take two pieces..shake and tap.....rack. The "legs" or drumsticks as we call them are double breaded and we remove the air from the hock to avoid them "blowing"

why you use sesaw basket? insted you make shake and tap at the end you did not press 7 times. you made same as a kfc chicken spicy

I work at KFC in NZ and it's the same except the racks in which it is cooked. and a 2 head of chicken is 18 pieces.
NZ kfc is 20% chicken, 30% coating, 40% oil & 10% sexual harassment

In Canada it’s very expensive. Easily, $30-40 dollars or more for a family of 3. That doesn’t include drinks either. If you’re single then it’s ok.

great Video..When Col.Harland Sanders 1st sold his chicken the chickens were cut up into 9 pieces and were cooked in large pressure cooker pot's that would cook 2 whole cut up chicken's at a time Now KFC is cooked in either collect-a-matic or henny-penny type deep fryers that can cook larger amounts of chicken at one time..How times have changed! :D

KFC tried to give people a healthier alternative to their toxic oil, fried chicken, when they came out with grilled chicken. Man that was delicious and so much healthier. Unfortunately they discontinued it because people just wouldn't go for it.

From my experience the gloves are removed and discarded as soon as the cook is done handling the raw chicken.
When they say ORIGINAL it is being cooked in a closed pressure fryer.
The chicken is soaked in brine first to make the flour and herb mix stick.
Actually it is received from Tyson meats. Fresh chicken is dipped in water before being dumped into the flour

Milk and egg mix is powdered. One 50lb bag of Flour with ~2 cups milk and egg..then add salt, pepper, and a bag of premixed herbs and spices...flour is mixed. Still appears white as in video

I work at KFC, This procedure is outdated. The procedure is 7-10-7, And not use of the rocker basket, unless it's ECC (Extra Crispy Chicken) not COB. (Chicken On Bone) But yes gloves meet all food safety requirements, and each KFC undergoes a monthly Inspection.
