- Hi there, today I want to show you how to meal prep three delicious and nutritious salad recipes, perfect for a healthy work lunch. We are making a broccoli quinoa salad, a famous TikTok salad recipe and a Greek-inspired salad. These recipes are not only healthy but also satisfying and stay fresh in the fridge for a long time.

🥗 RECIPES, all for 2 portions:
🥦 Broccoli Quinoa Salad:
• 1/2 cup uncooked quinoa
• 1/4 cup slivered or sliced almonds
• 1 head broccoli
• 1 hand fresh basil
Dressing:
• 1/4 cup olive oil
• 2 tablespoons lemon juice
• 1-2 tablespoons smooth Dijon mustard
• 1 teaspoon apple cider vinegar or more lemon juice
• 1 teaspoon honey
• 2 medium cloves garlic, pressed or minced
• Salt & pepper, to taste
• Chilli flakes (optional)
🥒 Jennifer Aniston Salad:
• 1 cucumber
• 1/2 cup uncooked quinoa
• handful of each mint and parsley
• 1 can of chickpeas
• 1 red onion
• 1/2 a block of feta cheese
• Juice of one lemon
• 2 tablespoons olive oil
• Salt & pepper, to taste
🍅 Greek Salad:
• 2 handful of arugula
• 2 handful of cherry tomatoes (approx 200g)
• 1 cucumber
• handful of dill or parsley
• handful of olives
• 1 red onion
• 1/2 a block of feta cheese
Dressing:
• 2 tablespoons of joghurt
• 2 tablespoons of mustard
• 1 teaspoon honey
• 1 tablespoon of apple cider vinegar (or lemon juice)
• Salt & pepper, to taste
