Guess what? You can dip eggs in mineral oil for preservation, and then store them at room temperature for more than 3 YEARS! seriously, it works. They stay liquid, and don't go bad. We add a 40 watt lightbulb to our chicken coop in the fall and winter, inside. We make sure to place it away from their roosting area so they can rest. The shorter daylight hours can be extended that way until 9 P.M.We put it on a timer so it shuts off. Works great for keeping up winter egg production. We also feed higher protein during and after they start the mounting season. Good show.

It works. At 13 months only the couple that had cracked were not good. There is however a difference between fresh and preserved. The texture and viscosity, especially the whites, is more like a 3 to 4 week old egg. It runs further in the pan than the thicker fresh eggs.

This really does work! I wanted to suggest that you can go to the bakery of a grocery store or to the dumpster behind a doughnut shot and get their food safe buckets with lids..FREE. I just know the glass jars are spendy. And the buckets can be stacked.

So, can you do this with washed eggs that you have refrigerated after washing?

This is very helpful. I've wasted so many eggs.
Does it matter if eggs that might be fertilized? I've noticed they go bad quicker. Wasn't sure if that could compromise the process.

    Good Vid Tim Thanks.
Are they only good for baking and cooking? Or are they good for poached and scrambled eggs?
I poach 4 eggs every breakfast with out fail unless I’m
    Not home.
We freeze some of our farm eggs. Keen to try this.

Does the pickling change the taste of the egg when you go to use it later? Like "soak through the shell" from sitting so long?

This may be a dumb question but after you preserve the eggs, how do they turn out? Are the yolk & white solid like a boiled egg,so I can just peel & eat them? Or are they still in their raw state & need to be cooked once I open them?

This method looks great in theory, and I don't have access to 'farm fresh eggs', but my store bought eggs average 1-2 egs per dozen that have hidden hairline cracks which would negate this whole operation, as the whole jar would go bad.

Pressure cooker is a MUST for any meat!
For certain other things which are very salty, or acidic (ie vinegar), then you can get away with water bath.
