I am in Hyderabad, India, a vibrant city that seamlessly blends its rich historical heritage with modern charm.
Our culinary journey began at the renowned Nayaab Hotel's Restaurant. Famous for its Indian breakfasts and diverse dishes, their Paya Nihari is a standout. Eager to understand its preparation, we ventured into their kitchen. This specialty, made from lamb trotters, is simmered in a rich meat stock and garnished with coriander and cream. It's a testament to the hotel's dedication to exquisite flavors. At our table, we were introduced to local favorites like the Malai Paya, a creamy medley of fried leg and spices, and the bheja fry, which came in two delightful variants. We also tried the classic Khichdi, often enjoyed for breakfast. We paired it with Khatta, a tangy tamarind sauce. Together, especially when complemented with keema or Gurda, it's a delightful taste of local cuisine. Our feast concluded with two standout desserts: the Qubani Malai and Caramel Egg Pudding.
Next, we headed to the Nimrah Cafe and Bakery, celebrated for their Osmania Biscuits. Their unique Osmania biscuit bar offered many vibrant drinks. I sampled their "Iranian Salad", which, surprisingly, didn't have any Iranian elements! Additionally, we enjoyed a luscious creamy fruit salad that was quite flavorful.
Next we went to Ram Ki Bandi Known for their eclectic dosas and tawa idli, we first sampled the tawa idli, an innovative blend of mozzarella cheese, masala, onion, and coriander. The contrasting textures and creamy flavors made it a hit. We couldn't resist the Cheese Dosa with its special masala, nor the Pizza Dosa - a fusion of traditional dosa topped with contemporary flavors like corn and cheese, enriched with butter and paired with peanut chutney.

Have you tried Hyderabadi Irani Chai? It was introduced by Iranians who came to Bombay then also came to Pune and Hyderabad... Irani cafe of zoroastrians is integral part of Bombay apart from muslim restaurants of Gujarati muslims and Delhite muslims
