      I have an Aogami super carbon blade that has a hardness of 65, I can get it sharp enough to cut swirls in tissue paper, it's wild.

      knife bros are impressed by the dumbest shit. I have dull kitchen knives that can do that. the pt was under tension the whole time. slicing a free hanging pt like that is a legit test for an edge. everything else like whats shown is a gimmick.

      @@rolltide1912 I don't endorse his products but I'll give you an example you are likely familiar with. Carter Murray. Likes to forge kitchen knives in a basic carbon steel called white #1. knives like that have very little edge retention, but they are ground so thinly at the edge, the geometry is such that these knives effectively never feel dull when cutting. the cut initiation will degrade with the edge. like I said this steel has very little edge retention. but because of the cutting geometry they continue to cut well even with dull edges. That's an example of what i'm talking about. Point is. under tension it's not hard to slice a PT. The impressive version of this is supposed to be a PT hanging by its own weight. for the knife to bite into that, you need a very acute apex and fine edge and for the knife to actually slice through it, you need to be apexed correctly. The secondary point is while it might seem impressive at first, take 1 hour a day, 1 hour total time including setup and cleanup which is what takes the most time, for a week and I'd bet my life you could do the same thing before next Friday without any issues.

      @@TimJohnson-x1o You are completely missing the point. Yes a very thin profile can cut when dull to an extent. However there is no place for such an edge in a folder. Your statement does not compare apples to apples.

      harder steel in general but especially with fine grain structure makes it easier to sharpen. sharpening is about more than just machinability or how it grinds, its about forming an apex, deburring, etc. fact is harder steels do better, finer grain do better. and the rockwell C scale isn't exactly linear, so the difference between 60 to 65 is considerably more than 55 to 60.

    I use a Worksharp Precision Adjust with Venev Dog series stones. I sharpened one of my Magnacut Sebenzas and it just sharpened way to easily for me to believe Chris Reeves claims of 63-64hrc.
    I was pleasantly surprised when I was able to have a knife maker test it for me and it averaged 63.5hrc across 3 spots on the blade.

      Steels that are heat treated well are the easiest to sharpen, it's the softer steels that usually become an issue, it's far easier to cut a perfect v and create a burr on something hard than it is something soft. Especially if your using the right stones

      @@NeevesKnives I agree with you except for the Rex121 blade I sharpened a few months ago. It was only at 68.5hrc too, I say only but that’s still high. I spent 45 minutes on one side trying to get the burr! It took me an hour and 46 minutes to sharpen that thing! I hope that edge holds for a long time.

      @RSRS-ws3px yeah you want to be sure to use a very coarse diamond plate for reprofiling especially on those kind of steels, I use a 140 atoma which a super aggressive but cut fast. Bur yes high wear resistant steels are just that which is how they hold an edge so lomg

      thats not a pt test. its under tension which means dick. any halfway decent kitchen knife can do that when it's dull. let the pt hang by it's own weight rather than hold it at tension then try. not that it's some great achievement. anyone with half a pulse can learn to get those results straight off a stone within a week of trying. lets keep- it real. knife bros, I just don't understand. everything is myth and magic to them.

    You’re supposed to de-burr a knife with a leather strop and compound so it removes the burr and polishes the edge and makes it sharper. It’s a lot better than doing that on the stone.

      Also if you sharpen cpm steels like magnacut some form of diamond sharpening medium is the way to go. I use DMTs up to 1000 grit, with constant water drippind from the kitchen tap onto the stones, which helps the removed steel not to interfere with the sharpening. Consistent passes on each side are the most important aspect of sharpening even before taking grit into account. You can hear the consistency in this video by the sound the knife makes when being sharpened on each side and you can also feel it when sharpening by hand yourself. Good sharpening has an almost smooth feeling to the process, where the blade glides alomg the stone in one constant motion. I learned to trust tactile feedback while sharpening when i reground axeheads with files, and i think it is is one of the fastet ways to learn this. If you practice on stones and knives only, start off with only a coarse stone, they can take your edge to ridiculous levels of sharpness when going lighter on the pressure you apply when sharpening. God do I love sharpening! Hope this helps.

      I'd bet you've never actually tried because you're afraid of "ruining" your $300 toy that you pretend is some serious tool. literally anyone over the age of 12 with a pulse could learn how to do this to this level within a few days. all it takes is actually trying it. Stop watching videos a mythologizing nonsense and actually try it.

    Looks like your angle is less thanks 20 degrees? Is there a reason why? If anyone know please reply thanks trying to learn sharpening as we speak.

      Because lower angles produce longer edge retention and better cutting ability.
      You need a steel with a good hardness and toughness combination to get away with thinner edges without chipping though, like magnacut, 14c28n, 4V, and such. Something brittle like D2 needs a coarser bevel like 20-30 degrees. 14c28n at 63 could get away with literally down to 10 for fine slicing tasks like kitchen knives, was designed for razor blades.

    Hey Jerad, I see so many people say use the diamond stones dry... I think ive noticed you use like soapy water/Windex? Doesnt it rust the stones?

      if you are talking about diamond plates then yes i prefer dry, you can use water or soapy water but yes you need to dry them well and oil them to prevent rust in that case, if its resin bonded diamond then you should use soapy water

    Awesome, impressive results.
    Low grit with such a keen edge opens up a very different edge behavior. For rope cutting and barbecue crunchy fat layer a well make aggressive edge is much better than polished edge.Its also great for vegetables.
    Drawbacks are raw meat, wood and impact knives. These go well with polished edge.

      No Diamond is harder than ceramic, I wouldn't sharpen a super steel on ceramic, I would hone them but not reprofile

    I love blades, especially my edc knives and tactical/defensive carry’s. But I don’t have a lot of experience sharpening on a stone. Good first stone? Also should I get a budget knife to practice on?

    I see that hutchels strop up on the wall.. great piece of kit. Carried mine with me as edc for over a year straight at work and in whatever vehicle I’m in on the weekends. Eventually the leather pealed off from shrinking in the sun, I glued it back on but ended up buying a slab of premium veg tanned leather with enough leather to make 3 of these strops for $6. Attached an old screwdriver handle I found on ground to the end of a 2x4 I found on ground (drilled a hole slightly smaller in diameter than the screwdriver,filled with wood glue, hammered the screwdriver in leaving the handle sticking from the board) and holy shit. Im never going back. The $6 strop made of trash just works better, the veg tanned leather I got is indeed premium and even without compound strops better than the hutchels, with compound the extra width of the strop is absolutely amazingly functional especially when stropping larger blades. It has replaced the hutchels as the edc, I would highly highly recommend making one of these.

    I know you've got plenty of stone variety but you should check out columbia gorge diamond stones. I took a chance with them and they're pretty impressive, usa made too. They seem to leave a better scratch pattern than vevev and they don't load up as easily. Btw it's nice to see tactile is doing a good job with magnacut

      thats cuz they're bound in a softer resin relative to venev. it's a matter of preference, for instance the nanohone is allegedly even softer, but also depends on what you're trying to achieve. imho all of these items are too costly for what they are. if I'm going to spend that kind of money, I'd rather import a legit consumer product like Naniwa diamond stones from Japan for about $150 each. Not to mention tons of other ways to skin the cat. Anyway the softer binder will be both more forgiving but also more likely to dig the edge in and generally leaves a "softer" scratch.

      @@TimJohnson-x1o Yep, the C.G stones are too soft to use edge on. Tried them, hatted them. I use only Venev, Nanawa, and now Potava metal matrix cbn stones. Unreal bite!!!

    Got a question unrelated to the video. I've been thinking about getting the Manix 2 for my first nice knife. I don't know if I should get it in CPM S30V or CPM 15V though. I've heard people say that S30V is considered more of an average steel and likes to chip, so I've been leaning more towards 15V. But I don't have any stones yet so I don't know if I'll be able to sharpen 15V. Which one would you recommend?

      If you get 15V, beware rust. It is NOT a stainless steel at all.

      15v isn't even a steel that actually exists, child. How many knives do you think even exist in the entire world made of 15v? Not many. It's a gimmick associated with a one time campaign/stunt done by a company that is known for selling ugly overpriced knives based on a gimmick of using "different steels." Aka they sell the same ugly overpriced knives to the same group of idiots over and over again.
      unlike 15v which doesn't even exist as far as you should be concerned, S30V is actually a knife steel and it's actually a thing which actually exists and anyone can buy. Even your mommy, for you.

If you'd use one of your 2 braincells to do some research, you'd learn that 15V does exist and is one of the steels they use to make the manix 2. But your 2 braincells are probably too busy fighting for 3rd place

      Yes! Only difference ie the thickness of the layer of diamond matrix. How much do you sharpen? Hundreds a year, or only one or two a week.

      @@michaell397 hobbyist knife maker I sometimes use stones to refined the flats in my knives and also I sharpen for some chefs and locals. Usually I go through a shapton 320 in about 2-3 years

      For a lifetime of use, take a look at Poltava CBN Metal Matrix stones. (Crisper edges as well)!!!
