CJ's Chicken Poblano Quesadillas | Blackstone Griddles

  • CJ brings the heat with his Chicken Poblano Quesadillas! Every bite is packed with flavor, from the seasoned chicken cutlets to the blend of roasted poblanos, garlic, and avocado. Topped with a drizzle of homemade sauce, this might be his best quesadilla yet!

    Ingredients
    Large tortillas
    1 pack chicken cutlets
    Shredded Mexican-style melting cheese
    1 small can Hatch diced green chiles
    3-4 poblanos
    4-5 tomatillos
    2 jalapeños
    2 serrano peppers
    2-3 chile de árbol
    ½ white onion
    1 lime
    3-4 garlic cloves
    Kosher salt
    Coarse black pepper
    Blackstone Hatch Chile and Cheddar Seasoning
    Directions
    1. Preheat your Blackstone griddle to medium heat, setting up two cooking zones.
    2. While the griddle is heating, season the chicken cutlets with olive oil, Blackstone Hatch Chile and Cheddar Seasoning, salt, and pepper. Cook on the griddle until fully done. Remove and cut the chicken into small pieces.
    3. Add a little olive oil to the griddle. Place the poblanos, jalapeños, serranos, tomatillos, garlic, onion, and chile de árbol on the griddle. Toss in the oil and cook until the peppers are nicely charred. Remove the garlic and chile de árbol earlier to prevent burning.
    4. Once the poblanos are charred, remove them, slice off the tops, halve them, and remove the pith and seeds. Chop into medium-sized pieces, keeping one poblano aside. Add the remaining poblanos back to the griddle along with a handful of Monterey Jack cheese (either shredded or in small cubes).
    5. In a blender, combine the charred veggies, a pinch of salt and pepper, the can of Hatch green chiles, one avocado, and the juice of a lime. Blend until smooth. If the salsa is too thick, add a little water and blend again. Set aside.
    6. When the cheese on the griddle starts to melt and form a nice cheese skirt with the poblanos, flip as needed to avoid burning.
    7. To assemble the quesadillas, place tortillas on the griddle. Sprinkle Mexican melting cheese on one half of each tortilla. Add some diced chicken, a portion of the cheesy charred poblanos, and a drizzle of salsa verde. Fold the tortilla over to toast and melt the cheese. Once done, remove from the griddle.
    8. Slice the quesadillas, plate them with a small bowl of salsa verde, and enjoy!

    Hello CJ !!
    Been watching for a while , Bought my Blackstone 36'" and have been cooking alot of stuff you have , but today i watched the video of the chicken pablano quesadilla,
    inspired me for some salsa , so i had my wife get me some pablano peppers and everything that goes in salsa i cooked off on the Blackstone . Turned out really good ,

    Over here in California, Arizona and New Mexico, it's Hatch Chili Season !!!! everything you ever and NEVER wanted is made with Hatch Chilies for a whole month, so I may or may not use the Hatch, these look great, I too LOVE Mexican Food, I make Tacos, Burritos, Enchiladas, Quesadillas and my Chili Relleno Casserole on a weekly rotation, with various Homemade Salsas to mix it up.

    I normally don't criticize, but I gotta call you out CJ. Wouldn't it have been easier/faster to use a scoop for all of those veggies instead of the tongs. Nate was judging you while you did that, just saying. And for once I'm on Nate's side, of course you had to add green chilis to the recipe. Just wouldn't be "CJ" without them.

    Second Comment sorry: Having grown up with Avocado trees in my yards, NEVER use a Sharp knife to cut one open, ESPECIALLY don't do that Hack into the Seed to remove 9:39, there's THOUSANDS of emergency room visits because of that move it's known as "Avocado Hand" Giggle it. Use a Steak Knife that comes in a whole set of Kitchen Knives, that knife doesn't have the edge NOR does it have the weight behind it to cut into your hand, I've been to many BBQ's as a Kid and an Adult where somebody chooses to just use the Knife they've been cutting and chopping with, only to have a few Beers too many and end up with bad results.
