I’d recommend blanching the bones first a la ramen broth. It really cuts down on the skimming later. Also, nut butters are a nice shortcut to thicken/flavor. This looks fantastic. Thanks for the thoughtful recipe 👍

I also prefer Maesri in general (available in singles at most well stocked Asian-centric stores) for it's flavor, but man that Red Curry one is hot af. Tread lightly if you aren't a spice-head, esp if your slurping it up with noodles. Your's looks great, I'd eat that in a second!

Do you think it would taste okay with maggi cube broth?
The lemongrass and galangal make this a really light and refreshing broth. I'd recommend using boxed chicken broth with at least some lemongrass if you can't use pork bones. Or maybe there's an instant pho broth out there?
