Them sopaipillas takes me back to the days we would go eat at Pancho’s Mexican Buffet. You all from TX might know what I’m talking about. They had some great sopaipillas at the very end of your meal-you just had to raise the little flag in the middle of the table and the waiter would bring you another basket of that deliciousness! Now there are only 2 Pancho’s left in all of TX that I know of. Unfortunately the nearest one to me is an 8 hr drive. Honestly, I never imagined I would learn to make them here on this channel but Cowboy Kent, you’re the man! I’m a go get me some peanut oil and make these puppies at home!

Omh ponchos! Sopapillas was the bomb, butter and honey! And they're rice and enchiladas were so good.
My mom used to make these with her pinto beans and green chili with pork. She was born in New Mexico. I learned how to make them. Stuffing them with the beans and chili is delicious.

@@hambonec171 I too miss them. When I have asked about them here in southwestern NY at a so called Mexican restaurant I get blank looks. One other interesting point. While in New Mexico I went to a Star Trek convention and Scott was the speaker. One of the first things he said was New Mexico had the best Sopapilla's. Wonder if they paid him with them? lol

I'm Mexican from California and never heard of all those things until I met my husband from Albuquerque.
What do you do when the hurricane misses you? Call all the neighbors have them bring their excess supplies and have a party to celebrate! We had 5 grills and 25 people in my backyard cooking. I'm from New Mexico and just south of Albuquerque. These are definitely from New Mexico. I remember eating them at Pancho's restaraunt and the little Mexican restaurant just across from the Santa Fe Railroad station in ABQ. Stuffed sopaipillas with meat and beans with chili and even a little lettuce and tomato. Or get a stuffed sopaipillas plate at Montaños restaurant in Belen New Mexico
Yup. I would raise that flag for more sopapillas. Damn i miss panchos.
My mom is from Belen lol. Her family does a sopapilla dinner once a month with the whole family for all the birthdays in that month. And yes they all eat them stuffed haha. Sopapillas are my favorite thing about visiting New Mexico lolll
Pancho's in San Antonio TX. In college I would go back to SA for the buffet, which had declined, but the sopapillas were still great - as others have said, I would aways raise the flag for more of those.

Jimmy in Mexico my grandma just makes taco stuffing or she’ll make a green chili filling. It’s so good. My dad though (not New Mexican) will stuff red chili enchiladas in the sopapilla which is surprisingly good haha
In the early 60's we visited my Grandfather and Grandmother in Santa Fe New Mexico. Grandmother Jose made sapodillas for me for breakfast with cinnamon and honey. What a wonderful memory.

Kent love your videos, the pan you mixed those in is what we always used as a wash pan to wash our hands in. It was kept next to the matching water bucket and dipper we drank from (no running water when we were kids)

LaCoccinas in Tucson made these and flour tortillas two feet across sprinkled with cheese and melted under the broiler served as an appetizer. Wonderful memories.
Great recipe Kent, i fill mine with roasted green hatch peppers, some medium rare cut up sirloin steak, a little enchilada sauce, and some mexican blend cheese, oh is it delicious, God bless you and Shannon and your food site, plus them good dogs, they want some to.

I remember having some of these about 100 years ago. I was just about 10 my family took a trip to California and we stopped at some relatives of my Dad's in Albuquerque. We went and ate at a Mexican restaurant. They were so good 👍. This brought back alot of memories. I'm 57 now and my parents have passed 😢

The one and only time I had Sopapillas was at Casa Bonita in Tulsa, OK back in 1986. It was so memorable. I have not been able to find it in California (LA area).

One of my first jobs back in 1981 working in a friends Mexican restaurant was stretching the dough for the Sopapillas.Tom used a five minute timer to make sure they were done right.
And yes after making a 2 pound batches my arms and hands were hurting! But the rewards were worth the trade off of my aching arms.

Mmm Mm! My mother used to make those for us when I was a kid. When she made them it was usually for a Sunday supper desert. A little powder sugar on top, some honey, and bingo! A great treat!

Lard is actually a healthier fat than most vegetable oils including crisco.
Same! When I make tortillas, pie crusts, tamales, etc. I use last. My momo (grandmother) cooked with it and she taught me what i know.

I mean who burns a flag of a country so great that illegals are constantly risking arrest and separation to be a part of. And done start me on the whole kneeling for the anthem and the flag. I picked up a 2 cup tin measuring cup from the 1800s after watching this! I can't wait for it to arrive! My home is from the early 1900s, I'm trying my best to decorate this home with items from the time this home was built. I remember the 1st time I saw your measuring cup, I thought to ask, but glad you told us during this video that it was your grandmother's then your mother's.
I remember, my Grandmother having one, as did my Mom.

Ha,ha sopapillas bring back real found memories over the years, my Dad loved those things with honey and butter, when we would go out to eat Tex Mex food here in Texas. Funny story was I worked with a older farmer like man several years ago early 90"s and it just so happened a group of us workers was working in a town that had a Pancho's Mexican Buffet restaurant, this old man had really never eat any kind of mexican food before. Long story short we all went to Panchos and they had the sopapillas there. Ha,ha he just about made a meal out of those things. What was real funny was the waitress came over to our table and wanted to know if she could get us anything and that old man spoke up and said yes ma'am bring me some more of those "Air Biscuits" we all just busted out laughing at him then.
Air Biscuits, light and fluffy, they are some good eating
