  • The 64mm SSP Unimodal V1 Brew Burr is one of the most interesting burr sets I have tried recently. They are incredibly clear/analytical and demand a fair bit from the user but once dialed in they taste amazing. However, for most folks, I think the V2/MP is the way to go as they are much more forgiving and often provide a tastier cup unless the V1s are perfectly dialed in. I talk about what exists in the 64mm burr size from SSP and then I compare SSP Unimodal V1 to V2.
    tl;dw V1 is difficult to dial in but can be clearer than V2. At peak dialed in, V1 is clearer + sweeter than V2. V1 will also emphasize all of the mistakes you make and the defects in your coffee. For most situations, I think V2 is good enough and is much more forgiving. The actual clearness between the two burrs is very close but the V2 is slightly rounder.

    At 7:12 in the first two pictures, it seems like the burr on the left is actually the V1 unimodal burr contrary to what the text says. The left burr in the pictures has no flat spots on the rim and also the teeth look more jagged/sawtoothy at the rim compared to the burr on the right.
    I ordered "unimodal" burrs from Option-O, oblivious to the fact that there are in fact two versions of it going around, and now I'm trying to figure out which ones I actually have and I'm a little confused. Could you help me out and confirm which burr is which in the pictures? 😅

    Great video Brian ! Now that SSP has the the 64mm “Lab Sweet” on the market ,would love to get your take on how it performs compared to the 80mm namesake from Ditting and the V2 MP/Unimodal from SSP (which I have on my ceado , and definitely recommend to all ceado owners out there :)

      I just switched out my Ode Gen 2 stock burrs for the SSP cast burrs v1. I noticed an increase in clarity and balance. Also interested in learning more about the Ssp cast burrs and what changed in the geometry between V1,and V2.

    Installed SSP HU in my DF64 a little over a year ago when we bought it, for espresso we use for lattes. We really love th HU burrs but I get bored easily and recently purchased the Unimodal multi purpose version 2 (I learned from your video I have version 2 lol) and installed them 2 days ago. Even drinking lattes I can taste the difference, it is a cleaner taste, I guess it's the clarity everyone says these burrs give you that I'm tasting. HU burrs gives you that slight "dry tongue" feel and the multi purpose is a less aggressive taste but still both are amazing. I'll need a second grinder now because I can't decide on just one burr set 😔

    The Brew Burr seems to be available for purchase from Option-O with their Lagom P64 (they call it “Unimodal V1”), so I’m not sure it is discontinued unless they have not updated their website. If it is available, that would mean there are three (3) SSP burr geometries to choose from:
    1. Brew Burr (Option-O calls these “Unimodal V1”) - only recommend for filter, not espresso
    2. Multi-Purpose (Option-O calls these “Unimodal-Espresso”) - recommend for both filter and espresso
    3. High-Uniformity - only recommended for espresso
    I’m am not sure that the name “Multi-Purpose Version 1” is appropriate for the Brew Burr. Yes, it is the first version of the Unimodal, but I believe that the “Multi-Purpose” name came about later on with Option-O’s 2nd version of the Unimodal (Unimodal-Espresso). It is called “Multi-Purpose” because it is designed for multiple purposes to be able to make both Filter Brew and Espresso. The original Brew burr (Unimodal V1) is not recommended for espresso, therefore it does not have multiple purposes. I’ll also not that Option-O refers to the Unimodal-Espresso burr as a Multi-purpose burr on their website when you are selecting it in their purchase drop-down options, but they do not refer to the Brew (Unimodal V1) as a Muti-purpose burr. This seems logical, until you consider that Fellow sells a SSP “Brew” burr, which some people say are actually a Multi-Purpose burr adding to the confusion.
    I recommend checking out the FAQ page for the Lagom P64 on Option-O’s website. They provide detailed explanation of the three versions and they offer all three SSP versions for purchase with their P64 Grinder.

    Hi Brian! When you say V1 is hard to dial in, is that the case also for filter? Could you briefly explain why they would make filter dial-ins more difficult? In my newbie understanding, the recipe itself or the number of pours etc. would have a bigger impact on taking your brews right into the box (18%-22% ish). Would filter brews in the box still taste bad with V1, i.e. is ithe V1 good-tasting box much more narrow?

    Hi, and thank you for this! I have to admit this whole burr geometry thing really makes my head spin! Now, can you help me out a little here: unimodal and high uniformity; I always took unimodal to mean one peak which I thought related to how the grinds are distributed - so, perhaps mistakenly, I thought it related to how uniform the grinds produced in other words more or less fines and boulders! Frankly, this just leaves me even more confused!!!!

    So to be clear on OPTION-0 website regarding Lagom P64, which of the two burrs should I go for if I prefer less acidity and more sweetness in brewed coffee? I don’t plan to be using this grinder for Espresso.

    Did Lance mention that V2 MP burrs have a longer drawdown time? I thought he said this. Also someone on HB mentioned these burrs have slightly more astringency in the finish compared to V1 burrs

    I have the DF64 with V1 unimodal brew burrs - get punched daily - for sure acidic and bright versus my Niche. Still not sure which I prefer, Niche definitely easier to dial in and use! Your comments are bang on

    Hey Brian, realise this is an old vid... But if you don't mind, how would you compare V1 and V2 on astringency when dialing in for filter? Have V1 in my 064s and wondering if V2 would represent an upgrade in this regard. Cheers!

      Did V1 fit in the 064S with no issues? I heard they needed to be 64.1 or 64.0mm and was under the impression that older V1s were 64.2mm. Looking to change the stock burrs in my 064S too

    Great info! Are you able to compare the taste profile of the C40, K-Max, V2, and Gorilla burrs for pour over? I liked the audio analogy.

      I have a C40 and a grinder with SSP 64mm unimodal v2 burrs. Honestly the comandante is amazing. It’s an incredible value, and the burrs are excellent. They are very, very clear for conical burrs. The nitro burrs produce coffee that tastes rounder and feels thicker. The SSP unimodal burrs produce coffee that is ultra clear. The cup is thinner. You are able to discern the flavors much better, and the flavors taste more intense. Given the option, I will always prefer the cups from the SSP unimodal burrs, but if you only handed me coffee made with a comandante, I will never be disappointed.

      @@EB-coffee ​Sorry for the delay. Thanks for your input. I recently bought the K-Max. In comparison to the C40, the K-Max offers a profile that lines up more with how you describe the SSP Unimodal V2 burrs. For light roast single serve pour over brews, I am trying to decide between the Baratza Vario/Forte with steel Ditting burrs and the SSP Unimodal V1, V2, and Gorilla Gear Black burrs.

      @@bpcarb hey! Also bought a K-max a little year ago, and I’m wondering other people also find that a lot of coffee get stuck on the sides of the jar and the burr exit, due to static? I think its mostly fines, but with some coffees it can be as much as two grams worth of coffee if I dont knockout it down into the cup. I just dont like doing that because then I get too many fines. What is your experience?

    The audiophile analogy hit the spot! My first time with a proper, "revealing", setup led to me hating a bunch of music I grew up enjoying. That's exactly how I feel about the V1 burrs with my Ode. When it is right, it's sooooooo goooooood. More often than not, dialing in is a colossal struggle. I keep a diary just to ensure there's logic to any tweaks and changes. I think the Ode is not well aligned--leading to sub 200 micron fines clogging the paper AND boulders. I'm curious to find my next grinder. Considering the P64 since I already have these burrs.

      @@efafe4972 you can't align burrs on an unstable burr carrier. My V1 ode was garbage. Df64 would have been better for a near enough price

      @@OddJob728 well first of all depends on which axis it's unstable on. if the contact point and width of the gap between burs is able to remain consistent the centrifugal forces will keep the burs aligned vertically. the issue would be side-to-side play. In my ode its really not like in this video i don't have any play like that. did you try it at least? df64: if its more consistently produced it's objectively a better grinder obv but that doesn't make the ode garbage. reality is if you don't drink espresso and your burs aren't shaking side to side you will not taste the difference. I've tried enough coffee through different grinders to know this. most enthusiasts would agree with me. if you really care that much about alignment as a filter coffee drinker you are simply mentally ill and you need to go do some blind cuppings to show yourself how biased you are. if you just want to appreciate good manufacturing and have a higher quality grinder yeah for sure get the better grinder. but it will absolutely not affect your cup as much as you are acting like it is. go do a cupping. other variables are far more important and unless you have your coffees dialed in to the thousandths place on every variable and your arm is computer actuated for the perfect pour technique and water is de ionized and then re-mineralized exactly the same and your coffee is roasted by individual bean, stop worrying about this its dumb and pretentious

      @@OddJob728 also the ode v1 with stock burs is known to be a bad grinder... at least upgrade to ssp. the issue you have with fines is likely not the alignment it is probably because v1 burs are really bad

      @@efafe4972 SSP V1 brew burrs, even sifting didn't solve the problem. I've been a happy P100 owner for about a year now. The ode can grind the occasional French press coffee at the office.

      @@NashvilleFanatic ssp posted a picture on their Instagram and so did lagom. That's really all the info I have. They look identical to the 80mm sweet lab burrs, but in 64mm. Super excited to get my hands on em! They are coming some time in 2022 I think.

    What would you recommend for sole filter use? MP or Brew?

    So I've got a Mazzer Major with the mazzer 83mm burrs in it, I've been considering picking up SSP burrs - What is the general consensus of in-cup performance? Is it similar from going from a sette 270 to a major? Or is it an unreasonably small increase in clarity for the extra 300+ USD?

    Did you try the original Mhlkönig that served as template? How do we know how the coffee should taste? Coffee beans were never intended to be roasted and brewed. We do chemistry on them to generate these tastes and brewing is one last step. I think the audio analogy is nice but at the same time inherently flawed.

    I don't understand why V1 are reffered to battery acid. Uniformity means you can extract higher without bitterness. So the more unimodal a burrset is the more you can extract your coffee thus having less acidity. I was really puzzeled when I got my V2 MP because everything tasted less acidic, lots of chocolate and many rooiboss tea kind of cups. Fruity punch comes with high RPM on my Lagom P64 (less uniformity). The really sour cups come from my old Vario Home, where it got bitter fast. I ended up with dark tasting coffee that was overly sour. Frutiy flavors were limited to beeing sour without a chance of having developed fruity flavors. All because of too much fines that would mud out my coffee when going deeper with extractions...

      Did you ever find an answer to that. I have the same issue. NO matter the setting, I'm always getting lingering bitterness. I'm thinking maybe the alignment is off.

      You need a dial indicator tool that can measure in microns. Unfortunately, these tools are really expensive. I ran into the same problem as you: I got the V1 burrs, couldn’t align them and it drove me crazy so I just ended up with V2.

      @@carptz I finally did manage to align then, but you don’t get the wipe you do with flat edges. I had to use a jewellers loop to see the tiny striations in the ridges where the burrs make contact. For the most part you can’t see it with the naked eye. It also drove me crazy… : )

    Is anyway conical burr can produce higher clarity and cleaner cup than ssp burr? How about comparing to C40 which is one of grinder that known to be able to produce very clean and high clarity coffee? Who is the winner in term of clarity?

      You can absolutely have a conical be clearer than a flat but it depends on which SSP burrs you're comparing to! Ex: MC4 / Lagom Mini 48mm are clearer vs. 64mm SSP HU or on the other hand you have dark roast optimized large flats like the Kafatek MD burrs.

    I bought v1 burr at ssp themselves after v2 was launched, I just said to hs that I want to buy brew burr. And then they sent me Unimodal V1 burr.

    I’ve had V1 for over a year in my Ode and man, Brian you are right. Some coffees I just give up on and the ones I find that sweet spot with get vac sealed and put in the freezer. I only accomplish it with about 1 out of 3 coffees I try which kind of gets annoying. Holding out on Ode V2 burrs or ssp 64 mm lab sweet clones. Whichever comes first. Started to preorder gorilla gear burrs till I saw the price

    You forgot to mention that SSP Unimodals work great with (really) short espresso ratios

      I thought they said it works well for longer ratios on Lagom's site (V2 / Multipurpose at least). But yeah I find shorter ratios are better 1:2 ish.

      @@BensCoffeeRants at equivalent roast levels, unimodal burrs work better with shorter ratios. But since many people who prefer clarity prefer light roasts, you still end up with like 1:2.5.
      Mediums work well at 1:1.5, darks at 1:1, with SSP unimodal burrs.

      I keep asking around for more info about this and it's really frustrating. Everyone says these burrs are only good for turbo shots but that doesn't make sense if they're a fast extracting burr

      @@andrewdevall4438 I dunno I think they're fine like any burr you just get more clarity and not much body. I just use em like any burr. Usually 18g in 36g out for espresso. But they are better suited to coarser brew methods I think with lighter roasts.

    Good helpful video, thanks. But if it's ok to say, I think it went on a bit too long. Because of that almost didn't "like" it. Which would have been a shame.
    Brian I alike your vids and you clearly have a huge amount to share. This is the second of your videos where I felt they stopped being as interesting about 60% in. If there'd be a way to focus and boil down the last half into much shorter, or even leave it out until people ask in comments.

    Audio is a great analogy. Like you say: it’s also awful. I thought the HP-1000 was the definition of “neutral,” until I heard them again (after years of ownership) after further years of HD-800 with a few years of Magnepans and Thiels in between. I quit worrying about this stuff with audio long ago.
    I enjoy that, since I’ve gotten back into coffee (after a lapse of many years), I get to be just as awful with coffee as I was with audio.
