Probably piston ring(s) but it sounded like something also was slapping in it. Also maybe have a look at the valvetrain play and bearings. Also check the oil if you notice something.
Everything else checked out. I got it all re assembled and running. No more smoke. The issue was the piston ring gaps were somehow lined up. Not sure why that happened. I've run it for several hours since then and I haven't had any issues
This engine does sound pretty loud for some reason. The connecting rod bearing surface was in perfect shape and the valves were adjusted properly. I'm guessing that's just the way it is on this engine

It sounds like and looks like the choke is stuck closed.
Unfortunately that wasn't the case here. I later found out that the piston ring gaps were lined up somehow and causing lots of blowby
