Some people can't see the forest for the trees. The main benefit of a cauliflower crust versus a wheat crust is you are making an substitution that has more nutrients, less carbs, and is likely more easily digestible. Just because you are not a celiac does not mean there are no reasons to eat something gluten free; just as much as there's no reason for someone who eats dead flesh to not eat vegan food. If you eat meat it's still okay to eat a bean burrito. If you aren't celiac it's still okay to eat a cauliflower crust. Consider that most pizza is made with bleached, bromated, refined white flour and no whole grains, this is a healthier alternative. I prefer Neapolitan pizza but I have made this and it's good. Different; but really good for a vegetable pizza, which is what it is.
My very fussy autistic child made this for an exam, he ate it which was a big surprise and he said he enjoyed it, which was even more of a surprise. Thank you

I was sceptical to try this at first because other recipes squeezed the liquid out of the cauliflower (which seems like a pain to do). Anyway I gave it a try and IT WORKED. The pizza base is actually really tasty, healthy and smells so nice when in the oven. This recipe is one of my favourites now and I I change my toppings based on what I have in the fridge (courgettes, peppers, spinach, whatever leftover). Thanks for sharing such an easy, healthy recipe :)
I made this recipe from Annas book "A Modern Way to Eat" and I have to say that this is soooooo good. Instead of Anna's tomato sauce, I made the classic marinara sauce though (tomatos, garlic, salt, sugar, herbs, cooking at least 20 min). I usually don't like pizzas but this one was delish!
So many people underestimate the importance of a good sauce. It can make or break a pizza, and imho it's probably the most important part. Throw some garlic, jalapenos, pepper, chili, tomato puré, anchovies and sugar in there as well. Let it simmer for at least half an hour on medium to low heat, and you've got yourself a simple but _really good_ sauce.
Ze Rubenator There's nothing wrong with good old ketchup. The sweetnes with the little sour touch can be really good in some dishes! :) I don't eat ketchup pure but I like to use it with soy sauce for marinating and stuff

As someone else pointed out in the comments, you can also squeeze the water out of the cauliflower after ricing it. Sometimes barely any water yielded, and sometimes it was a whole cup!
The middle of the base doesn't seem to hold. That's the issue I always see with these cauliflower crusts. I've seen some videos were people after the blend they heat the ground cauliflower then put it into a towel/cloth and press all of the water out of it. I have yet to try that but I think a combo of that step with this recipe will yield a fantastic result. Loving this channel btw, it has helped me be more confident cooking instead of relying on tons of processed garbage "meals".

I made it today for lunch it was delicious but the dough was kind of moist before baking , i used the whole cauliflower in the blender and noticed that the stems have lots of water does that mean we should only use the heads? Thanks for the yummy recipe

I tried this recipe but the base turned out to be very soggy :( I may have had some excess tomato paste and added a few other veggies like mushroom and paprika, would that have been the deal breaker for not having a crusty thin base? Please advice

can you use flax or chia seed egg substitute for actual eggs. can you use brown rice flour, chickpea flour, tapioca flour, arrowroot powder, instead of the oat, even if I use Gluten Free oats, still allergic. looking for similar consistency with AIP substitutions. would vegan cheese go well with this?
As a fellow vegan, I suggest a good ol' flax egg! (tiaskitchen.com/how-to-make-a-flax-egg/) If for some reason flax doesn't suit you, you can also use chia seeds.
