That's what I did the first time I played AC1. I made it to Masyaf and was sneaking around because I didn't know the guards were on my side. I spent 20 minutes getting through it when it should've taken me 2.

Or you're meant to use a tool to sneak attack them.
Or you could use a wind chime to distract them. That's literally what they're for.
