Ramen Salad:
1/2 head lettuce
1 package chicken ramen
2 Tbsp sesame seeds
.5 cup slivered almonds
4 green onions
Dressing: .5 cup oil. 2tbsp sugar, 3 tbsp vinegar ramen seasoning. Dress and let sit in fridge for an hour or more.

When Indonesians say "brown sugar" they mean palm sugar, not what we call brown sugar. It has a bit of a different taste.
Oh, and you can definitely find it in a NY Bodega, though it might be called "Mexican Sugar"
Maybe because we call palm sugar ia a gula Jawa is meant java sugar. And gula Jawa is different with other palm sugar because the color is red and the taste is really sweet.

@Simi Actually both Gula Jawa and Gula Aren are Palm Sugar, because we have no distinction in English and both plants are called "Palm".
@Simi ah, but neither is what we call "brown sugar" in America. In America we have a sugar made from cane sugar (gula pasir) and molasses (what the British call treacle), which is what I saw in the video. It has a very different flavor to it, and gula jawa or even gula aren would be preferable. In Mexico they also use a type of palm sugar which is a suitable replacement and easy to find all across NYC...

Gado-gado is translated as mix mix. So you need to mix all of the ingredients together including the peanut sauce
I'm seaching the etymology of gado = mix in the Indonesian dictionary (KBBI) yet what I found is that gado = eating your chicken/fish/meat without rice. This term is from Javanese ngGado. So I presume gado-gado means eating eggs and vegie without any rice --> it will be similar to pecel if we eat it with rice. Then afterward, since we eat gado-gado by mixing everything, it synonymous with mix-mix. So its the other way around. Not because gado means to mix, it should be mixed; but since gado-gado usually mixed, it synonymous with mix.

Because honestly the word "laborious" is kind of explained most of indonesian traditional dishes.
And just for your information regular people in Indonesia didn't eat gado2 like what beryl did. We not dip the vegetables into the sauce, we pour all of the peanut sauces into the bowl/plate full of the cooked vegetables and mix until the sauce and vegetables becomes one
Oh also what did beryl cook is more like pecel/pecal rather than gado2 as in gado2 you cook the peanut sauce
I mean considering that we used to be colonised for hundreds of years, laborious is basically something that is ingrained in our bones lol

@Rahmahdi Adi My family is from Indonesia and we make our Gado Gado just like you said. Also cabbage instead of spinach. Always cooked peanut sauce. Whenever I make it I think, I'll just whip this up. An hour or more later, it's ready. Ha!

Actually, indonesian people scarcely stew tempeh on every dish 'cause the taste will be plain. We usually marinate the tempeh with salt and garlic and fry the tempeh instead. Fried tempeh is more tasteful than the stewed tempeh, though. Have a nice cooking 👍❤️ And yeah, this video is talking about salad (like gado-gado). Then, I'm so sorry if I little bit out of the topic hhhhh 😂

For the dried shrimps, you can blitz it into powder & use it as seasoning replacing salt for your savoury dishes for that umami flavour, it's also good to add for stir fries, you can soak the shrimps to hydrate it a bit before adding to the stir fries, it's also good when making fried rice/noodles etc

If you really want to take the Ramen salad up a notch, toast the crushed noodles and sliced almonds in a little butter! Tastes amazing!!!
For the dressing, I’ve always used a mixture of white rice vinegar, a plain tasting oil (like canola or vegetable), a little garlic, and some sugar. 😋

I really like it, when the people you feature mention ways to veganize/vegetarianize the dish. It makes this channel very accessible for me even tho I don't eat dairy or meat products.
Never heard of Ramen Salad before. Now I must try it.
Btw: if you are lucky enough to be able to get unripe mangos, adding mangos to the papaya salad is awesome. Same technique as the papaya to shave it.

As long as it is shredded, you should use whichever method is available to you. I use my food processor...

It’s mango season in Bangladesh and I’m intrigued to try this papaya salad! Also….we love both green and ripe papaya in our country.

Hi Beryl. A couple of random suggestions for the dried shrimp. 1) They are a perfectly good beer snack. 2) Toss them in while making ramen - either while boiling the noodles to re-hydrate or at the end for a crunchy topping.

Fun fact 1: In Thailand (and I believe other neighboring countries) has a specific tool for shaving the papaya into strips.
Fun fact 2: Some recipes require 'Pla-ra' which is basically fermented freshwater fish.
Fun fact 3: 'Som' in Thai has many meanings depending on the context, but in 'Som Tum' it means Sour and 'Tum' means to bash (usually with mortar and pestle)
[It's also very entertaining to watch Thai recipes through foreigners' eyes, loved it]
For the Ramen noodle salad, you can also use shredded cabbage instead of lettuce and if you marinated the cabbage in the dressing it tastes so much more flavourful.
That’s how my family made the dish. It was more of a ramen coleslaw.

Beryl (or u guys) should try Authentic Gado-gado when visit Indonesia. They Put brown sugar-roast peanuts and lots spices and herbs.. its soo great. and the counter part gado-gado is Rujak-its more fuity side, its and the peanut sauce is soo unique its both sweet and hot..real chilies. :)

3:12 maybe you can boiled the dried shrimp and make shrimp broth. And make Indonesian fish cake called model (with tofu inside) and tekwan.
3:16 for the long beans if you want to try another Indonesian salad dish you could make “Urap”. It’s combination of few boiled vegetables (long beans, bean sprout, etc) and steamed coconut shredded sambal. You could eat it on it’s own or eat it with rice.
I've found that almost any spice you can just add to mashed potatoes or home fries and it will taste good.

If you're able to eat pork products, maybe some baked bacon, chopped up.
Cheddar cheese or Monterey Jack or red Leister are all supposedly good in potatoes too.
Leeks! Stewed or sauted leeks are also supposed to be good in mash. Make sure to wash them well, though, you don't want sand in your mash.
I feel the hair comment. A game changer for me was finding the undercut. A triangle that is shaved in your hair in the back of your head. Sooo much cooler, easier to wash, and not noticeable unless you wear a top knot.
A hair stick would also be a good investment lol
Omg I love gado gado, one of my favourite meals ever, especially with a really good tempeh. Had it so many times wrapped in a leaf from hawker stalls when I was there.
Papaya salad great too, just always a risky order because wow it can be hot!
For your mango episode please i really want you to try Mango Float or as I call it: "Mango-Graham Cake". It's easy to make and it is so delicious! Its main ingredients are Carabao/Manila Mangoes (sweetest mango in the world) and Graham Biscuits/Crackers, if you don't have Graham, you can also use LadyFingers. We always have this dish holiday/special occasion!

When I used to stay alone and away from family, I used to prepare a sort of ramen salad using Wai-wai noodles, tomatoes, chillies, lemon, garlic, spring onion and cabbage shreds. This segment brings back so many memories! Thanks for sharing this :)

We make ramen salad with cabbage. It is so crunchy good.
Dried shrimp is delicious and can be a staple in Malay cuisine! You can either crush them finely with a mortar and pestle or as it is, in fried rice, fried noodles, veggie stir fry, fried omelette. It's super versatile!
You can even deep fry them with cashew nuts and enjoy them as a delicious snack.
Hope you'll try them out Beryl (and anyone who happens to have dried shrimp!).

It is so good, and as mentioned by Victoria, I have not had it in years either. Although I break the ramen up a bit more and I toast the ramen and almonds slightly. I have used shredded slaw mix, or even chopped salad mix instead of romaine.

Though we use the seasoning packet from the ramen instead of soy sauce in the dressing, the unfortunately named "oriental" flavor is the one I prefer in it.

Hi Beryl, you mentioned not knowing how to use buttermilk in a previous video but my grandma uses buttermilk to make Soda bread to go with here home made soup! Especially tomato soup from my grandads greenhouse! Would 100% recommend!

I just had ramen salad for lunch today although it's just wai wai with veggies here in India I didn't even knew ramen salad was a thing! I added tomatoes,onions,boiled sweet corn and lettuce to a packet of wai wai with juice of half of lemon. It was the best!
You should also check out cold Chinese bhel it's a popular street food in India and you can call it a crispy noodle salad with cabbage,onions, and green bell pepper...
For authentic peanut sauce here are the ingredients:
Peanut
Water
Added by preference:
Raw Garlic
Raw Shallot
Raw Chilli
Vinegar / Lime Juice
Kecap Manis - Sweet Soy Sauce
Sugar (In Indonesia we normally use palm sugar)
Salt
1. Cook your Peanut in Oil until it turns golden brown and rinse it (a must to do step)
2. With your mortar and pestle, crushed the peanut and other ingredients.
Some people enjoy spicy version of peanut sauce and some not. If you want a thicker sauce, put lesser water.
This sauce could be used for a lot of Indonesian food as basic sauce; such as:
Salad:
1. Gado - Gado = Blanched Vegetables with peanut sauce (Tofu, cucumber, lettuce, bean sprouts, fried shallot, long beans, and prawn crackers)
2. Ketoprak = Indonesian rice cake (a more dense version compared to Korean one) with vegetables and peanut sauce (rice cake, bean sprouts, rice noodle, prawn crackers)
3. Karedok = A Version of Gado-gado with raw vegetables (not blanched)
Others:
1. Sate Ayam (Chicken Satay) = Chicken Skewers with peanut sauce
And other stuffs
Thats so funny! My mom used to make the ramen salad too when I grew up!! We called it chinese chicken salad though. We used a delicious vinegar based bottled dressing. Couple things different, but same concept with napa cabbage instead of romaine. So yum! 😋

In Indonesia, there are 2 type of salad:
Fruits with peanut sauce, tamarind, brown sugar, etc called "Rujak"
And the vegies one is Gado gado.

My family loves adding dried shrimps to sticky rice, chinese sausage and green onions (糯米饭/nuo mi fan)
you can also add them into stir-fried veggies and they add a lot of flavor to the dish, you can also use it in soup stock or have it with congee :)

For long beans you can stir fry it with potatoes its a popular side dish in india just cut long beans into bite size pieces and potatoes too then fry them in little oil add salt pepper if possible cumin powder . Its a simple vegies and can be eaten with cooked rice.
My mom used to make the ramen salad too! Now I'm going to have to pull that recipe out. If I remember right we used to put canned chicken on it sometimes to make it a full meal but still super quick and simple.
You can lessen your gado-gado cooking time by not blanching the veggies (prepare it raw). You have a different salad called karedok. It's a Sundanese people specialty from the western part of Java. But you still need to cook the tofu, eggs, and potato obviously. There's also a similar dish originated from the eastern part of Java (from the town of Madiun) called pecel. Kind of like gado-gado with an addition of lemon basil leaves on top and you eat it with warm rice so you can have a complete meal. It's also best accompanied with rempeyek (fried crackers with baby anchovies or peanuts) instead of shrimp crackers.
Thank you for the great video. As an Indonesian, Gado-Gado reminds me about the time when I was studying in my college. Sometimes I bought Gado-Gado for my lunch. Its been a long time I'm not buying it. Maybe tomorrow is the right time to eat it again.
Take that fried shrimp and throw it in Pad Thai or another noodle dish with the aromatics 😋 I haven't been able to find them where I'm from but that's what I would do!
you should try ricesalad: Rice, Hame cubes, gouda cubes, Canned mushroom slices, Mandarinslices, white asparagus, cucumber cubes dressing out of mayo salt pepper and some lime and mandarin water from the can if you like add some white onion cubes and serve it cold
I use the leftover spice blends in random dishes - add it to cooked lentils or veggies, or I marinade meet in them

You can use the dried shrimp to cook “tortitas de camarón” they are accompanied very often with “romeritos”, it is a herb with red mole and nopales. We eat it when it is Christmas or New Year in Mexico.

For the ramen salad, my aunt would add canned mandarins oranges as well as chicken. So good. the slivered almonds are key, too!

Hi Beryl! For the dried shrimp, you can crush them up using a pestle and mortar (or grind them slightly in a blender), and use them to add extra flavours to your stir fries. I would usually soak them in a tiny bit of water after crushing them just to give them a softer texture. You can even stir fry your long beans with them. Just stir fry with some soy sauce and garlic. I also looove to add some oyster sauce and chillies into my simple stir fry. ❤️
PS: I also add the soaking water into the stir fry. It's usually not a lot of water, just the right amount to soften the veggies.
I made the ramen salad this past week, but instead of romaine I use nappa cabbage. By far one of my favorite salads. And yes can I say memories of childhood!

rehydrate dried shrimps in some water until softened, chop finely and add to practically any dish that could do with a little more briney seafood kind of saltiness.
put it in soup, fried rice, dumpling fillings, takoyaki, okonomiyaki, pasta sauce, egg rolls
I've even tossed it into pizza sauce because my nephew hates anchovies but for some reason can't tell there's dried shrimp in his pizza.

I have been having the craving and having heard about sticky rice during the thai salad section, i'm already thinking about it.
There are both savoury and sweet versions. Those I know of and had taste before are Peranakan, Chinese/Hong Kong/Taiwan, Malay, Thai, Japanese, Korean.. omg!!! I'm so hungry now.. 😖
In Indonesia at least in my hometown we wrap the sticky rice/glutinous rice with banana keaves in shape of round bag and cook it. And we use Durian, fried bananas, and mung bean porridge to eat the sticky rice

Indomie goreng + bumbu pecel = rasa indomie sate (yang udah langka / bahkan punah). Coba deh, buat yang kangen indomie sate.

I always make gado gado to introduce people to Indonesian food because it’s pretty simple and tastes amazing. Also everyone makes it a little different what I also like.

Seriously though, the true characteristic of Som Tum is to mix everything in the same mortar with a pestle. When you bruised papayas and green beans with the pestle, the bruised vegetables will absorb the sauce. If you just toss veggies and sauces together, we called that Yum, which is the more direct translation of salad in Thai. In Thailand we consider salads and Som Tum the different food group because of this. It’s actually better to make a little portion at the time in a small mortar, rather than tossed them together in a bowl and make the papayas miss the beating they’re due.
I didn’t want to criticize, but making Som Tum the wrong way is just making you missing the real experience. That’s just broke my ex-Som Tum vendor’s heart lol.
Edited: the chopping papayas with a knife, rather than using special tool to render them into noodle-ish shape is actually an important technique to a delicious Som Tam because, guess what, it *bruised* the papaya! You can also control how thick the papayas you want, because big chunks and thin noodles are delicious in the different ways.
There is one important components missing in Gado gado & Indonesian food overall, that's the "crackers" or kerupuk/keripik. Most gado gado typically used 2 types of kerupuk/keripik. this are "keripik melinjo" & "kerupuk bawang/udang." I GUARANTEE it will boost the tasting experience & give that slightly wet cruncy textures into the mix.
Indonesia actually have so many salads, like each regions have its own specialty. Not only that there are also fruit salads or "rujak" in its own criteria & some will consists of ingredients that western people would never expects lol (i.e. Rujak Cingur).

My family uses Napa cabbage for the ramen salad. It doesn’t get as wilted as romaine lettuce does, but it soaks up the dressing more than regular green cabbage.

Wtf i just now heard about ramen salad. I had eaten uncooked ramen with the seasonings as snacks, but without any greens. I'm curious now, will try making it later 😁
