I have a Specialized Turbo Vado 3.0 with a mid-drive motor. Shifting on this type of bike is very different from a rear hub motor ebike. Mine is a 9-speed and I am constantly shifting to keep the motor in the sweet spot of the torque range.
Are there bikes that require you NOT to pedal while shifting? I have an E-bike with a twist shifter and if I am pedaling while shifting, everything seems to break and go crazy. It's hard to describe. But if I shift while briefly stop pedaling, it's smooth and I feel the difference in gears.
You must be pedaling when you change gears. That's because the chain has to be moving in order for the derailleurs to "derail" the chain from sprocket to sprocket. If you click the shifters without pedaling, the gears won't change until you do start pedaling, and when you do, you'll hear some very disconcerting noises.
It is also possible to be pedaling *too hard* while shifting. Always shift while pedaling gently. Downshift *before* you start the hill climb if possible.
Do we have to pedal at all? I don't want to even shift gears I just kinda want to use it as a "motorcycle" and just let the motor do a majority of the work. Is this possible on an e-bike?

I try to go on a lower gear to protect the engine kit. Its a bike i could not afford (5000€) but ive got it as a gift. Its a high quality downhill MTB, should i force its limits?

The pedal assist levels don't affect the throttle. In terms of the gears of the bike, you can be in any gear when using the throttle and it will be ok.
when i turn on my e bike can i put the throttle mode in number 5 max the max level on my e bike before pedaling ? ive done it many times and had no problems but ive only had it for a year
Somebody once told me to tap the brakes slightly to engage the motor cutoff before shifting to avoid over torquing the chain on an ebike. Any truth to this? Obviously you continue to peddle as with a normal bike.

I've snapped 2 chains already, is it best to stop pedaling before shifting then catch up to the motor? i just don't want to break another chain

I'd never heard that, but may be worth giving a try!
How does being in different gears affect the pedal assist?
Good question. Say when you lower your gear, it will make you slower and max out your pedaling.
