    I learned of this substance from watching Boone Bake where she placed information about isomalt. Then I wanted to learn more, and came across your website where you explained more about it in great detail, which in turn, brought me here to your YT channel.

    Hi! Can you add juice to the isomalt mixture to make a healthy snack? will it still harden?

      Hi Natalie! I recommend using oil based flavorings (like candy flavorings) to flavor isomalt, juice is not concentrated enough so by the time you add the right amount to the isomalt the texture will be too diluted! Plus the water evaporates a little from the heat and can make the flavor even less potent with anything other than oils. Isomalt is mostly used for decorative accents, but can be consumed in small doses (a lollipop or cupcake topper size is recommended!) Thanks for watching!

    Does the glaze spray take the sticky away?

      Yes it does!! As long as you do it right away before the stickiness gets bad, it will prevent it, and prevent clouding over too!

    how long ago to place your isomalt decoration on your cake and how can you keep it in the refrigerator without melting of the isomalt decor

      Hi there! I try not to put isomalt in the fridge or freezer because the moisture and condensation can affect the isomalt. It depends a lot on the humidity level of your fridge and your climate, so if you need to I would try doing a test of it prior to making the cake to see how the isomalt reacts in your area. Isomalt is going to look its best within the first week of its life, so I recommending making it and assembling everything as close to the delivery date as possible, and for more fragile pieces I wouldn't assemble until I arrive on site!     Why does isomalt fog up after its dry?

      Isomalt absorbs moisture and humidity from the air, and the longer it is out the more it can get sticky or cloudy. The best way to remedy this is spray it with clear edible glaze spray as soon as the piece is cool and that will lock out the moisture for weeks, even months!     Isomalt can cause gastric upset. Best for decoration with warnings.

      Thanks for watching! Isomalt is made from beets and is actually a probiotic. Up to 50 grams is fine for consumption, any more than that can cause stomach upset just like any probiotic, or even any large amount of sugar for that matter. But because of it's unique glass-like beauty, large isomalt displays are generally saved as momentos anyway, smaller pieces like lollipops and cupcake toppers are safe for consumption!
