Please pick second day air with a cold pack, if you don't we will have to call you and tell you that you need it. Although we love talking to our customers we just don't have the time to do that. So please help us help you get your order as quickly and painlessly as possible.
***WARNING***This video is made for educational purposes only, if you attempt to make this at home you do so at your own risk and we can not be held responsible for any injuries. Making hard candy is a dangerous process since such high temperature are used to make it. With that said, for those that are curious and want specifics this is how we make it.
For one full size batch we combine into a copper kettle 14 pounds of corn syrup, 7 pounds of sugar, 1 teaspoon of cream of tartar and 2 quarts of water. We heat it up to 315°F and stir in molasses. Then we remove it from the stove and pour it onto the marble table and cool it down. We then stretch it on the hook to add in air bubbles which turns it a nice golden brown. Then we put it through our fancy candy cutter before we wait for it to cool down and bag it up for you to buy!

I'm always so impressed that Steve pulls the candy with no effort but the younger guys are always grunting and turning red in the face from struggling with it. 😄
You've gotta think . Steve has been doing this for longer then Max has been able. So it's more of a second nature to Steve at this point. He could do it in his sleep.

Its called gravity, and old mate use's it to his advantage. The young bloke to dumb doesn't listen, pulls on it like its a game of tug of war
This may sound nuts, but 1 of my favorite things to watch is Steve cleaning out the copper kettle. I love the no waste and watching the spatula get all the candy out.

Hey Craig, tell Max he is getting better at the hook. I'm not a candy maker at all. But just like anything you're trying to learn, practice makes perfect. I remember learning to play the piano. I thought I'd never get it. I've been playing 51 yrs now. It's easy. Tell your mom that if you take a gingerbread man mold and turn it upside down so he looks like he's standing on his head, it becomes a reindeer. This is how I cheat on Christmas cookies with the grandkids.

Mr Cestaro was my gym teacher and I graduated in 2001. He also was my Driver's Ed teacher during my junior year summer session, so I got to know him a little better. Really amazing guy, and I think you're right Craig, he probably doesn't know the effect he has had on generations and generations of kids that went to ES-M

You know I always wanted to try the candy hook pulling because it always looks so easy and fun when Steve does it but to see Max doing it makes me realize exactly how much muscle it takes to do that.... muscle I don't have lol! Good job guys! Appreciate the video!

Do you really want to know how hard it is put 2 cups of sugar 1/2 cup of vinegar yes i said vinegar and 3 tablespoons of butter in a heavy sauce pot boil to hard crack stage you can't srir the mix or you will get sugar crystals you can wet the sides of the pan with a brush to keep the sugar from sticking to the pan. spread butter on a sheet pan. pour your candy on to pan making sure all of the pan is covered with butter wait about 3 minutes add cinnamon, clove or other spice like them even pumpkin pie spice works well, can be added when cooking. mix edges of cooling candy just like in the video I use bench scraper just like theirs can be bought at Walmart now. as candy cools pull candy between your gloved hands of just mix fast with scrapers because it will be really hot i use silicone gloves. makes great candy and you would never know it had vinegar in it. I have made for Christmas many times.

This video felt more like the old videos in the old place. The new place is awesome, but some of that energy that came through in the old place has been lost in the new place. I realise that the new place is bigger, so it's probably harder to have fun little chats when you are more spread out. That warm feeling is in this video and hearing you guys chat was cool.
I agree. They definitely needed more room and more facility, but I loved the charm of the basement .

I completely understand what Max was saying about not liking to hear your own voice outside of your own head . But, in his case , all he has to do is listen to Mr. R . because he has the identical voice . Many people in this world resemble someone in their family, but I don't think I've ever seen a father and son who were so identical in my whole life . I would love it if Mr. R was willing to be on camera more often .

Oh my goodness they look beautiful . Growing up we had a company called Darrell Lee , they made beautiful chocolates and amazing hard candy , we call them a little jar of jewels . They sold the company and its not the same but seeing these brought back happy memories . I was only allowed to by a tiny jar maybe every two months. Money was tight and they were expensive. Hi Molly, are you Australian? I used to be allowed to buy Darrell Lea chocolate and licorice once a week as a child in the early 80's in country Victoria. Even after DL closed and then reopened under new ownership/management, their liquorice is still very tasty. I went shopping last night (in Melbourne) thinking of Hercules Candy and wanting to get some peanut brittle like they make on this channel. I noticed Darrell Lea now have chocolate covered peanut brittle balls, which I bought, and then had a couple while watching this episode. The Hercules Candy videos are great to watch.
beeman2075 hi beeman , yes I am in Sydney. I was born in 69 and late 70's early 80's , being the youngest of 5 money was tight mid 80's I was a teenager and could buy my own. They had tiny bottles of tiny Jewel like candy. Darrell Lee is not as it once was. They're licorice was divine , soft sweet and delish. Now it's rubbery ,not at all like it was. Those brittle balls sound good . I have to go to the big shopping centres to get it from a pharmacy now days. Anywho good to speak to a fellow Aussie who loves hercules ,have a great day xox

biggyziggy 577 smile yep and the anise bullets. They don't make those now days. My mum always got the crystallised ginger and dad the liquorice. They thing was they got what we kids wouldn't eat but I always loved liquorice . It's not the same now , it used to be soft and melt In Your mouth ,now it's rubbery sigh. I do love this channel.
