Super Sauce! My beef and vegetable versatile pasta sauce for kids and family suppers!

- I think a lot of parents try to increase their children's vegetable intake in creative ways. This is one way I have tweaked what some may call a "bolognaise" sauce (which it really isn't...bolognaise is very different) with added veggies that my kids do not easily see. I also use it for baked pastas like lasagna. It really doesn't follow a specific recipe, as I always use up bits and bobs in the fridge for such pasta sauces, but I will put down the recipe I DID write for a similar sauce a couple years ago for a cookbook draft.
1.5 lbs (680 g) ground beef
2 tbsp (30 mL) extra virgin olive oil
1 tsp (5 mL) sea salt
1 tsp (5 mL) freshly ground black pepper
1 medium onion, minced
3 cloves garlic, minced
1 stalk celery, minced
1 medium carrot, grated
1 zucchini, grated
8 medium cremini mushrooms, minced
1 sweet bell pepper (orange, red, or yellow)
1 tsp (5 mL) dried basil
1 tsp (5 mL) dried oregano
2 tbsp (30 mL) tomato paste
1 cup (250 mL) beef stock
1 large can (28 fl. Oz.) good quality crushed tomatoes
1 jar of quality store bought pasta sauce (approximately 500 to 600 mL)
1 tsp (5 mL) sugar
1 tbsp (15 mL) Worcestershire sauce
A few dashes of hot sauce (optional)
handful of fresh basil leaves, coarsely chopped
Method:
Heat a large saucepan and begin sautéing the beef in the olive oil, breaking it up with a wooden spoon; season with the salt and pepper. Allow the meat to sit for several minutes so the meat will begin to release its water content. Once you see the water released, allow it to evaporate. The meat will now begin to singe in the oil and in its own fat as it renders. Begin stirring the meat well, breaking it up into very fine pieces as you go. Cook until the meat is well browned; about 10 minutes.
Add in the onions, garlic, celery, carrot, zucchini, mushrooms, bell peppers, dried basil, and oregano. Cook for about 5 minutes until the vegetables are softened. Add the tomato paste and cook for a minute or two and then add the beef stock, crushed tomatoes, tomato sauce, sugar, Worcestershire sauce and hot sauce. Stir it all up and bring to a simmer; cook for about an hour on very low heat. After cooking, stir in the basil and adjust the seasonings to your taste.
