    You're starting to borderline an old Italian Nona...a few simple everyday ingredients turn into something unbelievable. This is world class. Brilliant....good'n Rik :) SIDE NOTE: I have often thought about setting up a grow tent in my cellar just for herbs...tarragon being right at the top :)

    I really like this recipe. Especially with the crown of cheese! It’s similar to chicken cordon blue but WAY better! I can practically taste the sauce. A must do!😊

    Use a rolling pin to flatbed meats.works just fine. Put meat in open very large freezer bag and thump few times. cannot wait to try this receipe.looks delicious. another winner from Chef Rik with simple step by step instructions and the you don't have to add garlic. had garlic in my food all my life and still enjoy.😊😅thank you Chef Rik.🎉

    This looks an A+ class dish. I’ve made similar, but without the spinach, only cheese in the middle - so I can attest that the method is very easy, and the bacon makes it taste over the top delicious. I can’t wait to try it with the addition of spinach! TY Rik

    Tarragon and mustard is such a wonderful combination. And those wrapped chicken breasts, phenomenal! 🥰😋 What a delight to eat those. I think tarragon is an underrated herb. I know only very few people who have it in their cupboard.

    This looks beautiful Rik. This is something that make myself but havent for a while. I usually wrap it in prosciutto though. I love chicken like this. This is a different filling than I use but I’m going to try this filling cos it looks so nice. Thanks for sharing this recipe.

    Not to sound critical, but I'm curious why you chose to blanche the spinach rather than just wilt it in a warm pan, possibly in a little butter. The blanching not only reduces the flavor but introduces water, which clearly was not desirable, which was then compounded by placing the hot spinach into a bowl rather than in a strainer where it could drain out rather than soak. I would think the dry wilt would've been preferable for reasons of both flavor retention and ease of use.

    Hi Rik, love this type of spinach,like Greek Spanakopita, and rolled in chicken lovely, I would go with prosciutto as a wrap, because the bacon never crisps up enough for my fussy self.😂 I also love tarragon, in fact anything aniseed tasting,star anise a big favorite, made star anise ice cream once, the chef/ owner wasn’t too happy about it, but I though it was delicious.😂
