This looks an A+ class dish. I’ve made similar, but without the spinach, only cheese in the middle - so I can attest that the method is very easy, and the bacon makes it taste over the top delicious. I can’t wait to try it with the addition of spinach! TY Rik

Tarragon and mustard is such a wonderful combination. And those wrapped chicken breasts, phenomenal! 🥰😋 What a delight to eat those. I think tarragon is an underrated herb. I know only very few people who have it in their cupboard.

Not to sound critical, but I'm curious why you chose to blanche the spinach rather than just wilt it in a warm pan, possibly in a little butter. The blanching not only reduces the flavor but introduces water, which clearly was not desirable, which was then compounded by placing the hot spinach into a bowl rather than in a strainer where it could drain out rather than soak. I would think the dry wilt would've been preferable for reasons of both flavor retention and ease of use.
Hi Rik, love this type of spinach,like Greek Spanakopita, and rolled in chicken lovely, I would go with prosciutto as a wrap, because the bacon never crisps up enough for my fussy self.😂 I also love tarragon, in fact anything aniseed tasting,star anise a big favorite, made star anise ice cream once, the chef/ owner wasn’t too happy about it, but I though it was delicious.😂
