The spring supports the chassis and therefore dictates the ride height. The damper has no effect on ride height whatsoever and serves only to control the springs oscillations. Coilover literally means a coil spring that sits over the damper so this is not a coilover setup. I'm glad you achieved the result you were after but next time I would advise using h and r springs with bilstien b8 dampers. You would achieve the same effect with a proven spring rate and damper setup. This setup you installed prevents any reasonable adjustability anyway.
This is not a coilover set up. This is just a replacement of Coil and Damper, which are seperate as per the original. A Coilover is as it says in the name, the spring (coil) goes over the damper (shock absorber) giving you a single unit. Interesting video if missleading.

I have a dumb question, Do all W124 coilovers fit on any bodystyle? Like would E320 coilovers fit a 300E? I come from VW so in my head same chasis means same suspension but maybe I am wrong lol
As far as I understand it should, BUT don’t quote me on that, try searching the w124 pages on Facebook, I’d hate for you to spend the money and be a waste

You can either rent them from your local auto parts store if they have them, or you can get them online, I got mine from Harbor Freight
The rear bolt for adjustment is screwed to chassis?
The one that goes on the top of the spring? If that one, then yes it does
