You could also pull out the fenders like the AMG bodykit manual guides for E36 conversion, but that is not so obvious as the 500E. There are other ways of making the panels, but i think original is the way to go...and best of all buy a complete 500E, they also handle a little bit better than a regular W124, buy the E420 get 95% of a 500E (same engine, same brakes, same transmission, different differential and different fenders, and rear bench has space for 3), those are much cheaper than the more collectable version.
