Pasta Grannies enjoys hand rolled spaghetti called pici!

- Pici are from Tuscany and La Vialla is an Agriturismo near Arezzo, making and selling a range of organic wines and produce. Put the two together and you have a scrumptious lunch, which nonna Luigina shows us how to make.
Here is La Vialla's recipe:
400 g wholegrain stoneground wheat flour,
150ml approx. warm water.
50ml tbsp extra virgin olive oil
a little salt
For the Salsa Etrusca
120 g sun-dried cherry tomatoes in olive oil
80 g aged pecorino cheese
60 g hard-boiled egg
60 g pitted black olives
30 g parsley leaves
12 tbsp extra virgin olive oil
2 clove of garlic
1 hot chilli pepper
1/2 tsp each pepper/salt
If desired 2 small anchovies
Put everything in a food processor and blend until finely chopped
To serve mix add 2 to 3 tbsp of the cooking water from the pasta and stir through the pici.
You could make double quantities of the salsa etrusca as it is great for crostini

I was introduced to pici pasta while studying abroad in Tuscany. My new friend Emmanuel and his friends owned a small perfect restaurant a stone's throw from the fields they filmed for Gladiator's Elysium scenes...He mixed it with the most incredible mushrooms...ahhh, pici alla funghi! He said his place was 'simple,' he was right, it was magical.

The good thing is that youtube doesn't differentiate between thumbs up and thumbs down. Either mark means a response to the video but the thumbs dowm doesn't count against it. Ha ha to the trolls!

Wow Vicky, what a great recipe, i really like those thick spaghetti pasta noodles, and wow is she speedy, fast at mixing the dough, kneading the dough, pin rolling and finally hand rolling in the final noodle. When her brothers joined in, they did fine, but not with her speed, lol, she makes us men look bad, lol. Keep these great recipes coming, this one looks so delicious, i was not even hungry until i watched this, lol. God bless you all.

hi Joy, we borrowed the kitchen to make this video - it is one of the houses on La Vialla's farm, hence the slightly ad hoc nature of using different surfaces. Marble is okay for pasta, but a wood board is best as it gives an even better texture. best wishes, Vicky

Wow now this is something i'd love to try! something so satisfying about hand rolled noodle-y sorts of pasta, might be a bit easier than a lot of other pasta shapes for me :P And the sauce seems delicious too

The egg makes it creamy and the cheese adds umami - try using something like a light miso instead? It ceases to be Italian, but never mind 😊

@@aris1956 yes, I am very familiar with Italy... I've been travelling and selling tours to Italy/Europe for decades. And those tall guys in this video are not the norm... most Italians in most parts of Italy, are much shorter with darker features.
