- Enjoy 91 year old Mirella's take on a Ligurian herb pie. There is not set recipe for this: you need to find enough tender leaves from the countryside to fill your pie tin. Mirella also adds eggs and potatoes for body, and some parmesan for extra flavour. Her pastry dough is 200g of plain flour, 30g of olive oil and around 70ml of water to form a dough. I hope you enjoy her company!
Danced at the Moulin Rouge . Married a poet and writer for over 60 years. Still reciting poems and singing . Great cook. And she said she did it her way. Nothing fake. Thats one of the most rock and roll pasta grannies of the series. What a woman.

Thank you so much for this. The torta d'erbe is one of my favorite dishes from my homeland, and seeing Mirella was a joy. I don't think I've ever seen a more Ligurian looking woman, and the personality is spot on too. :) She could be my great aunt's clone, lean, strong, fit, feisty and with a sparkling personality, and in that picture at 3:32 she could be my mother as I remember her from my childhood; that beautiful bone structure brought tears to my eyes.

She does not look a day over 70, she is an absolute wonder-how dear and how special, and all her knowledge of local wild plants, and the poem-one of a kind and rarely made like that anymore!🙏💐💃💜 had to comment a second time, I’m so enchanted by and thankful for rare gems like dear Mirella! Nothing fazes her even at 91, , not even the steep stone steps, which she climbs purposefully , to look down at the magnificent. churning sea below and then recite one of her husbands poems with a theatrical stance ! Hats off dear lady, this is life as it should be lived!
Later, her irrepressible sweetness surfaces again in happy , tuneless song. Every inch Mirella!

what a wonderful free spirit. and quite the looker too with her hubby. I love foraging and collecting and knowing which plants are edible. I used to go out with elderly neighbor to a field near our homes and we would collect wild mustard tips and she would cook them. they were so delish.

I'm 42, I cannot agree enough. The pasta grannies generation and my parent's generation were the last of the capable generations. My generation and onwards is just a huge letdown to the type of world they were trying to build. I see no hope and am just glad I can enjoy some of these beautiful, capable, practical, and intelligent people.

That looked very tasty. I used to call that sort of pie a "pocket pie", as while out walking I'd forage for frsh herbs & greens & pop them into the large pocket of my jacket. Sometimes the contents would be used for a "pocket salad" but if they were ones that were better cooked a pocket pie it was. You had to be careful though though everything I picket was edible, some things could have side effects if eaten in too large an amount.
Mirella seems to have had an action packed life... and a good one. Long may that continue.

@@pastagrannies Ms. Vicky, thank you, foraging food like mushrooms, dandelion greens, hunting for meat, we do eat some animals that many folks outside of Appalachia would not eat such as squirrel, groundhog, raccoon, opossum , deer, etc... will never die in Appalachia, free food & a lot of poverty stricken folks, I tell folks that say they would not eat a certain food I/we eat, & I say , you'd be surprised what you would eat if you are hungry enough.
