Chimay blue started out as a christmas ale, a special quad brew that the monks came up with to big up their red. Red based, added sugars to up the abv AND extra spicy for the winter season sipping nature...
My gosh…. This is probably the world’s best beer. I just wish it was a Bittttttt cheaper here in the states. I was freaking wild when I found this and st. Bernardus in the same store. Damnit. They are so good.
Finding a Chimay and st Bernardus beer in the same store is like beer Christmas! It is definitely up there as one of the worlds best, there’s no doubt.
Guys, Just say amazing and complex a lot, would be spot on... 😅 aftertaste not lingering...What do you mean? The spicy, pepper caracter is so big and bolt, undeniably perfect finish for a trappist quad❤
Revisiting this one and it's definitely delicious, but you are right, the finish just fades out without leaving a strong lasting impression. I would say the impression of the finish is the most important aspect for choosing my favorite beer. Also I realized it's very interesting that beers with complex finishes forces me to take more time to savor the flavor, so I drink them more slowly. Hence I like lambic a lot. I still think Chimay is my favorite abbey brand though, compared to Westmalle, St Bernades and Rochefort, but I'm open to something new.
We say a lot in our reviews how the finish is usually the most interesting part of a good beer, so I couldn’t agree more Erika. You can’t go wrong with a Chimay beer that’s for sure, you always know you’re going to get a quality beer full of character and body.
Only problem is the dryness afterwards...Allexandro is going to wake up choking at 4am if he finishes that litre bottle...didn't stop me buying another one...just stuck to the 330ml....and I drank along with you....

The paper label 2020-2022 doesn't compare to 2019-2019 permanent label. Paper label lacking in flavor and complexity, permanent label complex-maple-oak simply one of the best beers I ever had.

one of the best old-world beers I've tried, the monks really loved the get their buzz on while communicating with god!
Oh they did alright … with every monk-made beer we review, the rabbit hole gets deeper and deeper

That type of bottle is called a "buikje" which means belly in flemish and dutch. So stubbies is pretty close.
