There are generally 2 ways in which the nut is served: served as is, or scooped out, mixed with meat, and then stuffed back into the shell. There is not right or wrong, and it's more down to personal preferences, or in the case of Peranakan food, how their great-grandmothers and grandmothers have been making it since decades ago. That said, it was weird how yours came out in 1 solid piece. I've not encountered that before. Anyway, looking forward to the rest of your series!

And wanna say that Sabar Menanti is solid Malay cuisine in a shophouse setting. so calling it overpriced "hawker food" felt harsh and uncalled for. But that's just my opinion.
U came to the Tekka 545 prawn noodles at the right time. I been eating this store for years as my office is nearby. And when their daughter who took over in the beginning, the consistency was not as good as now. Now it is almost very consistent good every time I eat.
Twice, the kpop girl group, went to Candlenut and Satay by the Bay. Also chili crab and tze char place but i don't recognize the restaurants. This was during their tv5 series.

Please start a prawn noodle series one day😂 i am a BIG fan of dry hae mee (the combination of sambal + shallots oil + lard is like GOAT and for the soup i like the prawn-forward umami type rather than porky based ones)... Your love for mala is probably like my love for prawn noodles. I really can eat it like 3 times a week (if I dont think about the cholesterol 😅) I have a few hidden/underrated gems in my comfort food go to~ maybe i will share if you start the series 😏 And yeah I don't like halved prawns too cuz it lacks the bite/crunchy factor.
Alderic, you can try Mikey chen or mark weins’s reccomendations. They might sometimes glaze the food more than krispy kreme glaze their donuts. But can be a good gateway to international audiences
I too, always advocate for paying more for local food. But 60$ for mini pomfret is too steep for me. Esp in assam sauce, which can mask the taste of a slightly unfresh fish. Id prefer to pay $60 for a teochew style pomfret. To me assam can reserve it for cheaper fish like stingray or batang a t a nasi padang stall. Meat is mostly just a carrier for the sauce here.
Hi Sir, not kerisik, kerisik is an ingredient for cooking. for lontong, or dishes, serunding or serunding kelapa is given as a topping or side dish. u can get serunding with ketupat eaten with rendang during festivities etc.
Nice video. I am glad we finally move on from Mala. Full disclosure, while I am not a fan of 'ma' though I am a fan of 'la.' I noticed that you did not go to Tian Tian for their chicken rice. 😉 I suspect it is because most Singaporeans think Tian Tian is over rated and for tourists only. 😝

That's not kerisik, that's called serondeng. It helps to add more flavour dynamics to the lontong dish. Kerisik is normally added in rendangs to boost the lemak and roasty-toasty coconut taste. Cheers and here's to one day seeing the best nasi padang series. 😊

To say the stuffed buah keluak is fake is poor reviewing. As per any peranakan dish, the "actual" recipe depends on the household's traditional preparation..
yeah I spoke incorrectly then. I have since been informed by the Peranakans. Although, compared to having the buah keluak as is, I still think the meatball version tastes way inferior. Like comparing durians to durian puffs.
