One-Pot Garlicky Spinach Rice | Sahtein!

  • After a lil hiatus, #Sahtein returns to you from a new home kitchen with a new series of recipes 🙏🏽 Starting with a staple favorite of mine, this SUPER easy one-pot herby spinach rice. With a cameo at the end from my dear dear camera queen KATELYN!
It’s so easy, I feel silly sharing the recipe but everyone should know this method so you can adapt and adjust it however you like. You can use any greens, or even roast and blend other vegetables and cook in the rice.
This is perfect for picky eaters (like I was) and is a sharp, punchy side that would go beautifully with warm roasted veg, a fresh salad, maybe kebabs... Or just eat this by itself like I do sometimes.
I used one cup of rice and two cups of water here, and didn't measure anything else! Once you do this once you'll get the idea pretty quickly. Enjoy!

This rice dish is insane, I made it with brown rice because I like the texture and served it with sweet potato lightly spiced with fenugreek and I had a carnivore for dinner who could not believe his best meal of the year was vegetarian

Did you spice your sweet potato with fenugreek seeds (powder) oder dried greens or what? Would love to know! Cheers!

@@nr1229 Hello, I used a gentle amount of the powder just after I braised the onions, ginger and garlic. Thereafter some dried leaves crushed for the last 2 minutes.

I would probably do this by blanching the spinach first to get it to wilt , squeeze out all that water, and then blend it with the exact measurement of water needed to cook the rice. That way you wouldn't need to guess how much water is in the greens and you can cook the rice exactly as normal. Looks delicious!

This rice and spinach dish made me feel good about eating it, but it also feels like you got high one morning and just decided on inventing it. Been there, done that. Regardless, you have such a great vibe that I know your friends are lucky to know you. The world needs more like you.

The spinach releases a kind of creamy juice . In France we do cream spinach (épinards à la crème) with fresh cream. And the spinach juice affects the cream and gives it a special texture. Same when you add spinach to a béchamel cream. I will try you recipe.

Umami is something that is produced in a chemical reaction between nucleotide bases (DNA & RNA from any living cell) and glutamate (an amino acid in proteins). Hence umami can develop in any ingredient that features proteins rich in glutamate and cellular material, under conditions where proteins and nucleic acids start to break down. Examples of strong sources of plant based umami include tomato and soy sauce. I believe the blended and cooked vegetables also develop some umami. And I am so glad to see new video from you! :))

Salaam Nadia, thank you so much for this delightful recipe. I struggle with enjoying spinach dishes with rice, but the garlic gave me hope and just had to try it for today's lunch. I had to make some substitutions according to what's easily available in my country. I used a combination of two types of spinach (malabar/pui and palong Shak), for the herbs, I used coriander and mint. I added four cloves of garlic, and the Bangladeshi in me couldn't resist adding some green chilis and half of a big onion to the puree with two cups of water. For the rice I chose one cup of long grained basmati. Everyone loved it! I couldn't believe how much I enjoyed it. Stay blessed

I have regrets. I took the part of "there's no garlic limit" a bit to literally. I wouldn't recommend using six chunky cloves of garlic for one cup of rice. I have a flight tomorrow and I'm sure the other passengers will not appreciate my decision making of today. Will edit when I try the recipe again with the recommended 2-4 cloves because this recipe definitely has potential.
