- Tapping walnut trees is similar to tapping maple trees. The main difference is in the amount of sap collected from walnuts vs maples. Walnut trees have more heart wood and less of the white sap wood while maple trees have more sap wood which provides a greater yield of sap. Michael Farrell, the director of Cornell University's Uihlein Forest, explains the process of tapping walnut trees.

Interesting. What percentage less of sap versus maple and how is the taste?
I wonder how much it reduces the growth.... I guess it makes smaller growth rings which is often wanted for aesthetics on furniture wood.
Hi Patrick. Tapping trees really has little effect on the growth of trees. The only noticeable sign is the stain column that is left behind in the wood after tapping. (Please see the tap hole maple video for more info on that.) If tapped again in the same stain column, little sap will be collected. So it's important to space the taps out conservatively...this will ensure that you can tap the same tree for years without affecting its health.
