I noticed that you didn't use assembly paste for the saddle, nor did Canyon in their tutorial video. Is this what I am supposed to do? I am afraid to damage the saddle.
There is something on the seat tube in this video (see the white stuff) - so maybe that's it? You should ask Canyon's technicians from their chat, but generally you do want the paste for avoiding a dropping saddle. It shouldn't do any harm anyways. Easiest way to damage the seat post is over tightening. Ps. For the viewers at home, check the said Canyon's instruction video. They show how the box is designed to be an assembly stand, for example.
