I love sweet potatoes almost anyway I can get them. It was my job to make the sweet potato casserole for the holidays, the recipe always changed until I found what everyone liked the most. I like texture, I never mashed the potatoes, I had a layer of sliced apples on the bottom sprinkled with cinnamon & brown sugar, potatoes on top of the apples with more cinnamon & brown sugar, butter, pecans, topped with marshmallows.

    Few questions.
    1. How many potatoes
    2.how long do you roast?
3.skin on or off when roasting?

    • @chewsir
      @chewsir 5 років тому +50

      1. 3-4 Lbs. of sweet potatoes for a 9X13 (3 quart) baking dish.
      2. Roast for about an hour at 400 on a lined pan or baking sheet. Poke holes in the potatoes or cut slits in them to relieve the pressure form the steam.
      3. Skin ON when roasting. Let them cool off and skins peel right off.

So many people asking for directions and measurements...
      INGREDIENTS
      FOR SWEET POTATOES
      Cooking spray
4 c. large sweet potatoes, peeled and cubed
      1/2 c. packed brown sugar
8 tbsp. melted (1 stick) butter
      1 tsp. pure vanilla extract
      1/2 c. milk
      2 large eggs
      1/2 tsp. kosher salt
      FOR STREUSEL TOPPING
1 c. packed dark brown sugar
      1/2 c. all-purpose flour
      4 tbsp. butter, melted
      1 c. chopped pecans
      2 1/2 c. mini marshmallows
      DIRECTIONS
Preheat oven to 350° and grease a 9-x-13" baking dish with cooking spray. Place sweet potatoes in a large pot and cover with water. Bring to boil then reduce heat and simmer until the sweet potatoes are tender, about 15 minutes. Drain and let cool slightly then transfer to a large bowl.
In a large bowl, stir together sweet potatoes, sugar, butter, vanilla, milk, eggs, and salt until smooth. Pour into prepared dish.
In a medium bowl, stir together sugar, flour, and butter until it clumps. Stir in pecans, then spread evenly over potatoes. Top with marshmallows.
Bake until cooked through and golden, about 30 minutes.

Add 1 teaspoon of vanilla extract to sweet potato mixture, after butter has been mixed in. I don't top with marshmallow, till 10 minutes before taking out.

I usually roast them at 400° F for 45-50 minutes depending on their size. You could also cut them into smaller pieces if you're in a hurry!

Just be sure you can pierce them easily with a fork. And they’re done!
