Here are so tips for the next time you do Swedish meatballs - from a Swede and a big fan. 1) Mix the breadcrumbs and the milk and let them rest for a bit, then mix it with the rest of the ingredients 2) Caramelise the unions and let them cool before adding them to the mix 3) If you want to do a Christmas version you can add some allspice 4) My grandmother (and I) like to add use some paprika powder
In Sweden, the gravy is mostly made by glazing the pan with a little water after frying some meatballs. We fry them in batches. The liquid, with all the good flavors, is then filtered into a saucepan and flavored with cream etc.
I never waste the fond. Oftentimes I cook off the excess liquid for a concentrate to use as a sauce or use in making gravy, no matter what type of meat or poultry it is.

He doesn't understand what's happening but I like to think he's taking it all in and learning, so I just wanted to say thanks for everything and keep up the great work you guys all do.

Sam at 1:42 “By the way, we’ll be giving another one of these away today. And maybe something else with it. You never know.” Me at 11:03 “Did I miss it?”
Great recipe! Personally, I would sear the meatballs in the pan first before making the sauce. The brown bits the meatballs leave in the pan is going to give the sauce that extra flavour.
Don't forget an excellent tip, I think Sam mentioned at least once. Cook a little piece of the meat mixture in a skillet prior to making in to meatballs. Taste for salt and adjust as needed. I know he followed a recipe exactly, or did he.
Here in Texas we fry the the meatballs and then make the gravy in the same skillet utilizing the fond and bits stuck to the skillet; the results are amazing. The IKEA meatballs look good, it just seems like they could easily increase the flavor by 50% or more utilizing the fond.

The food looks great, but where was the garlic press giveaway? I'm literally holding off on replacing my broken garlic press for the glimmer of hope I win.
I have one that looks like Sams and I've had it for 20 years. It's the Zyliss Susi garlic press and comes with a little studded plastic pusher to dislodge the garlic skin that sticks to the bottom. It's made of aluminum so don't put it in the dishwasher or it will turn gray. Mine is considered vintage now and the new design has changed, but they make a quality product. No need to peel the garlic first.
In Sweden...when you watch "The Muppets", the subtitles call him the "Norwegian Chef". HS cafeteria served köttbullar with baby potatoes...boiled/steamed a a dill sprig.

Oatmeal makes for a far more tender meatball. Put them in a bit of beef stock and a lot of heavy cream. "Today we'll give away another Garlic Press, and maybe a little something extra!" Proceeds to promptly forget about the garlic press AND the something extra.
Great recipe Sam. Additional mods. 1. Add sliced mushrooms. 2. Just make double batch of the sauce. A can of broth is two cups. 3. Use one full pint whipping cream .
Finland has a language completely different than the rest of Scandinavia, from what I understand it's from a family of language more closer to Hungarian.
Finnish is pretty similar to estonian language so its branch of finno ugric language closely related to estonian livonian votic and karelian with many words borrowed from indo european languages particularly from baltic languages german and russian.
@@treybell1053, Thanks for the info, I'm nowhere near an expert, I just heard that from some Language guy on youtube that obviously was incorrect on his information.
While we're doing Swedish cuisine, how about your spin on Surströmming? We'd all love to see a Sam-tastic fermented herring! Love the show - keep the good stuff coming!
pro-tip: Before you roll the balls, grab a little pinch of meat and make that into a patty and cook it. It gives you a good "finished product" taste before you go and roll/cook all the other ones. Say, you forgot salt or garlic etc... you eat the little patty and you'll know how things will be. It's a good "sneak peek".
If you have "leftovers", that means you already made balls. I got two problems with that tip. 1) The exact grams of minced meat provided and other ingredients like breadcrumbs are for exact amount of balls. There shouldnt be any leftovers. 2) If you use leftovers to test if it's seasoned enough, your balls that you made need to be destroyed, seasoned and then again made into balls. Cumbersome. Instead I would say "sacrifice" one meatball, but flatten it so it cooks much faster, and then taste if it is seasoned, before proceeding to shape the meat into balls. You could also divide that sacrificed meatball and give it to relatives/friends whom you cook with and have them tell you if it's nice or if something is missing - or atleast everyone got a little appetizer knowing what deliciousness awaits them.
i caught 1 episode a few weeks ago...i subscribed an now Ive been binge watching stoner sam every night when i get home from work! love the channel my friend! you've givin me hope to start cooking again brother! ty
Every swedish family has their own family recipe for meatballs. Ikea’s are probably the worst 😉 In my family we fry the onion, don’t use egg or bread crumbs but lots of cream and sweet mustard. They are a bit more delicate to fry but oh soooo much tastier 😋
My mom doesn't use garlic in her meatballs. She is not using mustard either. But darn, they are good. But my grandma's meatballs are a bit better tho. As you said, all recipes in a swedish home for meatballs are different.
My son loves IKEA meatballs! Can’t wait to try this one out. Give me an excuse to practice my Swedish chef routine. Thanks guys. Love to y’all from Memphis!

And as always ….. tell Astro to pipe down with all that dang barking and let’s keep the steaks medium rare! Fat =flavor! “Annndddddd we mix”
I always watch Sam the Cooking Guy in max quality. He is such a handsome man. Also love the food, the camerawork, the soundeffects, Max, and last but not least Chance's blue eyes. Now where to send my adress for that garlicpress? Oh and a bonus, since I think you really like it. Here in the Netherlands a food called a Kapsalon is as good as it is unhealthy, it is french fries, topped with shawarma or doner kebab from a rotisserie, drenched in garlic sauce and sambal, then some slices of cheese, put in under the grill for a moment for the cheese to melt. Top it with some lettuce and some cucumber, onion and tomato slices, and more garlic sauce and sambal. The moment you think it is to much sauce, add some more, then its done. Enjoy!
Hey Sam! Guess what?? I asked my local library to get your book so I could check it out and lo and behold they actually BOUGHT IT!!! A long time ago, when you were doing the morning news you had a recipe for peach cobler (using box cake) and for a Mexican lasagne (a culinery wonder). They were awesome and I made them for my family. Thanks for remaining authentic throughout the years. I really enjoy the show!
If it wasn't for the milk, for just the meatballs that's identical to my normal meatball recipe. Keep up the good work! I'd love to see you upscale an old camping favorite. The foilpack hobo dinner!
OMG Sam, the Swedish accent...you're killing me. Nothing like hearing a Canadian doing a Swedish accent. I'm whipping myself laughing, but the meatballs look great!!

I cooked the meatballs in the oven.. then made gravy separate and mashed potatoes.. then combined.. next time, I'm frying them.
You forgot the most important part of IKEA's swedish meatballs, the Lingonberry Jam. Everything else was spot on.
And at the risk of angering all of Scandinavia, cranberries make a serviceable substitute!
If I had such a huge kitchen just for myself and for my cooking videos I would never forget them !!

"Today we'll give away another Garlic Press, and maybe a little something extra!" Proceeds to promptly forget about the garlic press AND the something extra.
Nothing like getting spludged on by a garlic clove.
That...is a good Friday night!!!
You just can't eat Ikea Meatballs without the lingonberry jam, it's literally a sin that wil anger the ancient swedish viking tribes.
i travel a lot for work and these videos keep me sane i swear
I’m swedish and I approve there meatballs. However, we don’t sound the same as the danish
Or Norwegians! And Finns aren't really Scandinavians either...
Great, now i'm Hungary for a Danish AND Swedish Meatballs. Sorry, i'll be seeing myself out.
Yes, exactly!
Love the show - keep the good stuff coming!
pro-tip:
Before you roll the balls, grab a little pinch of meat and make that into a patty and cook it.
Yeah my grandma for example uses a lil bit of oats to make the meatballs stick together perfectly. Love any variation tho
Yep @@maxk92 most versions are great, even the IKEA ones work if your are out of options 😜
My mom doesn't use garlic in her meatballs. She is not using mustard either. But darn, they are good. But my grandma's meatballs are a bit better tho. As you said, all recipes in a swedish home for meatballs are different.
My wife and I love watching your channel. We use it all the time for new dinner ideas. She swears by your marinara sauce for pasta!
As a Canadian living in America I'll say that to them your Scandinavian impression probably sounded no different from your regular accent...eh.
Oh please
My son loves IKEA meatballs! Can’t wait to try this one out. Give me an excuse to practice my Swedish chef routine. Thanks guys. Love to y’all from Memphis!
Cranberries (or actualy lingonberries) really compliments this dish.
And the balls should simmer in the sauce, that's what makes them good.
The muppets! Now give me a garlic squeezer thingy homie! Love your recipes my friend, make them alllllllll the time!!
Sam! You legit make me laugh so much. I appreciate your total honesty and swearing and all the shit ya do!
Just made this with some Martha steward steamed yukon gold mashed potatoes and green beans. Best meal I've ever cooked. Thank you.
i started making my own food to bring to school and im gonna make most of sam's recipes i cant wait maybe i could pull some females with my cooking skills
LOL a man that can cook is definitely an attractive skill to have.
Best laugh of the week so far... Sam doing his Swedish accent 6:59
Damn son, that garlic press looks amazing! I wish we had one! Seriously though, love the videos! I have tried some of the Mexican dishes, minus the refried beans, and they are so good! Thank you for helping out with recipes that are so easy!
Yeah, he might be your son !
Why do i always watch these at 3am? 😆
When sam says he’s giving away another garlic press but doesn’t. SMH
I'm Danish and I'm impressed with the impersonation of the Swedish people! XD
Joshua Weissman would like to know your location, but better.....
Tell me how the butter in the pan at 5:10 sounds like Tokyo Drift by Teriyaki Boyz from Fast & Furious?!
Definitely missing some freshly ground nutmeg, one of the key ingredients in Swedish meatballs IMO, still looked great
And a bit more gooey texture since Swedish meatballs are more patė consistent then Italian meatballs ^^
We don't use nutmeg in our swedish meatballs. Might be some but have never meat anyone yet who does.
Hey Sam and Max just want to say that I really appreciate the work you guys out into your food . You guys give confidence to us viewers to step into the kitchen and simply try. I’ve eaten out my entire life and I’m tired of crappy subpar food. You’ve inspired me to step into the kitchen and try your spaghetti and meatballs recipe which came out great. Thx a lot for impacting my life and health for the better. Next I’m going to try one of the many sandwiches you guys have made using Japanese Mayo! Keep the content comping plz and thank you!
I am the first to actually get to check it out and you know what it's so beautiful that I am now going to buy it myself!!! Going to make some dinners with intentional leftovers now. Thank you so much for inspiring my husband and me to make some delicious new foods!! Also, Loved the Muppets and the Swedish Chef, it was my favorite show when I was a kid!
edit: My husband wanted to make something with the Kewpie Mayo and I couldn't find it anywhere near me so I had to order it on amazon.
A long time ago, when you were doing the morning news you had a recipe for peach cobler (using box cake) and for a Mexican lasagne (a culinery wonder). They were awesome and I made them for my family. Thanks for remaining authentic throughout the years. I really enjoy the show!
I’m impressed you were able to follow the ikea instructions
If it wasn't for the milk, for just the meatballs that's identical to my normal meatball recipe. Keep up the good work! I'd love to see you upscale an old camping favorite. The foilpack hobo dinner!
OMG Sam, the Swedish accent...you're killing me. Nothing like hearing a Canadian doing a Swedish accent. I'm whipping myself laughing, but the meatballs look great!!
Sam, thanks for all the great episodes, they are perfect for taking household cooks and raising their game to all-star levels. My wife thanks you for correcting my rib game. Looking forward to try some meatballs. Keep brining the goodness!
Next episode Sam assembles IKEA desk. Second channel of Sam The Assembly Guy is born. STAG for short.
